- 1 large onion;
- 1 carrot;
- 1 tomato;
- 1 cup of finely chopped cabbage;
- 1 clove of garlic;
- 1 \ 2 pods of chili;
- 1/2 cup rice;
- 1 bouillon cube;
- 200 g of ham;
- butter and vegetable oil;
- black pepper, paprika flakes, salt, water.
Method of cooking vegetable soup with ham
In a small saucepan, pour a tablespoon of odorless vegetable oil, add a tablespoon of butter.
Finely chop the onion and garlic clove. First, throw chopped garlic in the heated oil, after a few seconds - onions. Sprinkle vegetables with a pinch of salt, fry, stirring for a few minutes.
Next, add to the skillet a half of the chilli pod cut into rings, pour in 1 \ 2 teaspoon of sweet paprika flakes and pepper everything with freshly ground black pepper. Fry for 1-2 minutes to stand out the flavor of spices.
We scrape carrots, rub them on a large grater or grind them in a blender. We throw carrots in a saucepan, fry everything together for 5 minutes. During this time, carrots will decrease by about two times.
Then we send thinly chopped cabbage and finely chopped tomato into a saucepan. White cabbage can be replaced with color or Brussels sprouts. For two servings of soup, 100-150 g of any kind of cabbage is enough.
Now we pour out on the vegetables a floor of a glass of round rice and add a cube of chicken broth. Rub the broth with your hands into the crumb.
Fill the contents of the saucepan with cold filtered water. This amount of ingredients will need about 1-1.2 liters of water.
Over high heat bring the soup to a boil. Cook for 25 minutes on low heat. To prevent the soup from boiling off, close the saucepan with the lid. At the end of cooking, add a little salt and a pinch of granulated sugar to balance the flavors.
Cut ham into cubes 1x1 centimeter in size. Pour soup into plates, add sliced ham, season with sour cream and pepper.
