Sausage Tomato Soup - a hearty, thick, tasty vegetable soup in meat broth. This soup is good to cook on a cold autumn day, from vegetables ripened in the beds under the sun, it will turn out very fragrant, with a rich taste.
Of course, you can serve the soup to the table without additives, but sausages in it are so by the way that it is not necessary to prepare a main course for dinner.
As a child, when my mother had no time to mess with meat or chicken, she would add a doctor's sausage cut into small cubes in my children's soup. Perhaps, at an early age, everything seems tasty, but this recipe, from childhood, fell in love with my home, and now, when time is running out, I cook it for my daughter.

Ingredients for Tomato Soup with Sausages
- 1, 5 l of beef broth;
- 300 g of doctoral sausages;
- 500 g red tomatoes;
- 150 onions;
- 300 g zucchini;
- 300 g potatoes;
- 100 g sweet bell pepper;
- salt, sugar, vegetable oil, ground sweet paprika, basil.
A method of cooking tomato soup with sausages
Delicious homemade soup can be prepared only with homemade meat broth. Of course, if there is no time at all, and the bouillon cube will come down. However, it is better to keep the broth ready in the fridge or freeze - it helps out in emergency cases.
So, remove the frozen fat from the broth. Throw it away is not necessary, useful for roasting or steaming vegetables.
In a soup sauce pan, heat 2-3 tablespoons of odorless vegetable oil, throw in finely chopped onions, add a little broth.
Pass the onions to a transparent state.
If you just fry the onions in the oil, it can be overdone and turn into chips, and for the soup you need a caramelized onion - soft, tender, transparent.
Grind ripe red tomatoes in a blender until you get a smooth mash, then rub the mash through a sieve straight into the pan.
Fry the onions with tomato puree for a few minutes.
Zucchini clean the peel and seeds, cut into cubes. Add zucchini in the pan to the onions and tomatoes.
My potatoes, peel, cut into small cubes, throw in the pan behind the squash.
We clean sweet red pepper from seeds, cut it finely, add to the other ingredients.
Next, add the remaining broth or pour boiling water and throw 2-3 bouillon cubes into it.
Bring to a boil, cook for 30-40 minutes until the vegetables are completely soft. In the end, salt to taste, add 1-2 teaspoons of granulated sugar and ground sweet paprika.
Ready soup grind immersion blender until smooth.
Doctor's sausages cut into small round slices, throw in a saucepan, bring to a boil again.
To the table we serve the tomato puree with sausages hot. Before serving, sprinkle with fresh basil, it is better than any other greens combined with the taste of tomatoes.
