Vegetable soup on whey “Syrbushka” is the simplest and cheapest herding soup. The first dishes on whey came up, probably our distant ancestors. Any, even the prehistoric hostess, thought about what to prepare from the whey remaining after cooking homemade cottage cheese or cheese. I was visited by this thought when I first made delicious homemade cheese. The separated liquid turned out to be quite pleasant to the taste, and did not want to send it to waste. As a result of the research, a recipe for a shepherd’s soup was discovered, which I tried to cook. Since then, the production of cottage cheese and cheese at home has blossomed, since there is no waste. After all, besides soup on whey, you can make pancakes, pancakes, pies and drinks!

Ingredients for vegetable soup on whey “Syrbushka”
- 1, 5 l of whey;
- 150 g onions;
- 4 cloves of garlic;
- 200 g carrots;
- 300 g potatoes;
- 50 grams of corn grits;
- 2 teaspoons dried parsley;
- 25 g butter;
- 15 g of vegetable oil;
- pepper, salt.
Method of cooking vegetable soup on whey “Syrbushka”
Onions need a lot - it's a soup base. Cut the onion, then melt the butter in a deep thick-walled pan or broiler, pour a tablespoon of vegetable there. In the heated oil we throw the chopped onion, sprinkle with a pinch of salt, passeruem to a translucent state. At the end add chopped garlic teeth.
Carrots cut into large circles. This is a marching dish, so the exquisite cuts are useless; shepherds generally throw a whole carrot into their pot.
Fry the carrot with onions for a few minutes.
Potatoes cut large, throw in the pot to the rest of the vegetables.
Next, pour the whey into the pan. In some recipes, it is advised to dilute it with water, to be honest, I did not understand why. After all, we do not dilute milk or kefir with water when we are preparing milk soup or fridge, so I decided that in this case water would be superfluous. So, heat to boiling, salt to taste, reduce the heat, close the lid and cook for about 25 minutes.
Then pour corn grits and dried parsley, again close tightly and simmer for a small fire for another 25 minutes.
Ready vegetable soup on whey and pepper, for a balance of taste, you can add a pinch of granulated sugar. However, I add sugar when making cheese, so the balance of salty sour and sweet in my recipe is respected.
To the table, vegetable soup on whey is served hot, sprinkled with fresh herbs. Enjoy your meal!
