The salad of cucumbers with onions for the winter is the simplest vegetable snack that can be prepared at home from inexpensive and not at all exotic foods. Snacks are prepared very quickly and simply, but it should be noted that it takes time for the juice to stand out from the vegetables (approximately 2-4 hours). After the onions and cucumbers are soaked in salt, they will soften a little. Such vegetables are easier to put in cans, moreover, they occupy a smaller volume, and the finished salad will not settle.
An important point of the recipe is sunflower oil. It should smell like seeds, that is, choose not refined. If for some reason the smell of seeds does not seem appetizing to you, cook with high-quality olive oil first cold pressed.
Cucumber salad with onions served as a side dish for meat or fish, it will perfectly complement the mashed potatoes and cutlets.

- 1 kg of prickly fresh cucumbers;
- 0.5 kg onions;
- 20 g of table salt;
- 15 grams of granulated sugar;
- 65 ml of unrefined sunflower oil;
- 2 tsp. black pepper (peas);
- 30 ml of apple cider vinegar;
- chili pods, cloves.
A way of cooking cucumber salad with onions for the winter
Prepare dishes for conservation. So that the banks do not explode, you need to go responsibly to this stage. Banks and lids are carefully washed, rinsed with clean water. We send the dishes to the oven, heat to a temperature of 110 degrees Celsius, leave in the oven until it cools completely.
We soak the cucumbers for a couple of hours in spring or filtered water, then rinse thoroughly, trim the tips.
Grind vegetables on a vegetable cutter to make slices of the same thickness.
Onions clean from the husk, cut out the root lobe. Cut onion into thin slices as shown in the photo.
Add chopped onion to the cucumbers.
Sprinkle cucumbers and onions with salt and sugar, mix thoroughly so that the salt is absorbed evenly.
Put a clean plate on vegetables, set the load on top, for example, a bowl of water. Leave the vegetables for 3 hours to stand out juice.
At the bottom of the banks pour 2 tablespoons of unrefined sunflower oil, the one that smells like seeds. Believe me, with this butter you get an appetizer - just yummy fingers!
Next, put the vegetables in a jar tightly, pour black pepper and add a few small chilli peppers (optional).
Fill the jar with cucumber salad with onions on the shoulders.
Pour a tablespoon of apple cider vinegar into the jar.
Juice, which stood out from the vegetables, poured into a saucepan, put on the stove, bring to a boil, boil for 2 minutes and pour on vegetables. If the juice is not enough, add a little boiling water.
Banks are covered with lids, put in a pan with hot water. Sterilize 12 minutes after boiling.
Ready cucumber salad with onions tightly close, turn upside down. Wrap the blanks with something warm, leave it at room temperature until it cools completely.
