Chicken Laghman - Oriental thick soup is either a noodle with a thick vegetable sauce and pieces of chicken meat, or a noodle soup with vegetables and chicken, in general, it all depends on the amount of broth added. If you want to lagman for the second, then reduce the amount of broth in the recipe by half, and for a thick soup for four people, about 1.5 liters of chicken broth will suffice.

Traditionally, homemade noodles for the lagman are made very thin. However, in our hectic days, there is not always time to make homemade pasta. In addition, the finished pasta is not inferior to homemade, for example, thin spaghetti fit just right.

Ingredients for cooking lagman with chicken:
- 1,5 l chicken broth;
- 300 g chicken breast fillet;
- 240 g fine noodles or spaghetti;
- 110 g onions;
- 150 g carrots;
- 150 g green beans;
- 150 g sweet bell pepper;
- 250 g tomatoes;
- 4 cloves of garlic;
- 50 g mint;
- 50 g cilantro or parsley;
- ground paprika, black pepper, vegetable oil, salt and sugar.
Method of cooking lagman with chicken
First we make a combined lagman vegetable sauce. Pour 3 tablespoons of olive or vegetable oil into a frying pan, throw in finely chopped onion, sprinkle with a pinch of salt, fry for a few minutes over medium heat.

Shred carrots with a thin straw, add to the onion, fry together for another 7 minutes, it is necessary that the carrots become soft.

Cut the red bulgarian pepper into long, thin slices, add to the carrot and onion.

Cut ripe tomatoes finely, throw to the rest of the vegetables. Instead of tomatoes can be added to the sauce canned tomatoes without the skin or homemade tomato sauce.

Next, add chopped green beans to vegetables. I cooked with frozen pods - it is very convenient.
Now that all the vegetables have come together, pour a pinch of granulated sugar, ground to a wig, salt to taste and cook over medium heat for 20 minutes.

Cut the fillet from the chicken breast, cut the meat for the lagman into large pieces, sprinkle with salt, pepper with black pepper, pour with vegetable oil. Fry the chicken in a well heated pan for 2-3 minutes on each side.

Separately, boil spaghetti or home-made noodles until cooked, then recline in a colander.

Put boiled macaroni in a large saucepan, add vegetable sauce.

Add the roasted chicken to the pasta and sauce, pour the hot chicken broth.

A few seconds (no more than half a minute) fry the garlic and finely chopped mint in vegetable oil. Cut a bunch of cilantro. We bring lagman with chicken to a boil, add roasted garlic, greens. Remove the pan from the heat, let it brew for some time.

Serve Lagman with chicken on the table hot, decorate with greens, pepper with freshly ground black pepper. Enjoy your meal!
