How to make kvass at home.

Few people know how to make kvass at home, although this drink is quite popular with us, especially on hot summer days. Today on my blog I want to give a few recipes for this wonderful drink so that you can make it at home.

How to make kvass.

It is used not only to quench your thirst, but also to prepare cold first courses, okroshka, beetroot, some national dishes. In stores sell ready-made drink, bread or rusk. Also, there is sometimes a kvass extract or kvass mash on sale. It is not difficult to cook by reading the recipe on the package.

Make it at home is easy, in addition, you can experiment with recipes to your taste. The basis for kvass are crackers, better than rye. For their preparation, I always use homemade bread, it is still tastier than the store, you can find its recipe here. Then the drink turns out the best quality.

How to make kvass at home.

First we need to make crackers, just cut the bread into slices and dry them in the oven. It is better if the crackers are slightly browned, then the drink will have a beautiful golden color. Fill the crackers with boiling water, cover the dishes with a lid and let it brew for 3-4 hours. Choose dishes, as well as for home winemaking, glass or enameled, but not in any way aluminum, so as not to be oxidized. After the crackers have infused we have a wort, it must be filtered. Separately, dilute the yeast in a small amount of boiled water and add to the wort. There you also need to put sugar, mint, cover with a cloth and put in a warm place to ferment for 10-12 hours.

After fermentation, a foam appears on top, we filter the drink and bottled, you can put a little raisins on the bottom of the bottles. It remains to tightly plug the stoppers and leave the drink to stand for a couple of hours at room temperature. Then we remove the bottles in a cold place for three days. Everything, our drink is ready.

Ingredients:

one). Crackers - 500 gr;

2). Water - 4-5 liters;

3). Fresh yeast - 10-12 g;

four). Granulated sugar - 100 g;

five). Fresh mint - 10 gr;

6). Raisin - 25 gr.

Petrovsky kvass.

It is prepared just like regular brew, but instead of raisins and mint, you need to put grated horseradish and honey in the finished drink and mix everything well.

Ingredients:

one). Crackers - 400 gr;

2). Water - 2 liters;

3). Fresh yeast - 10 g;

four). Honey - 50 g;

five). Horseradish - 50 gr.

Cranberry Kvass.

Berries to sort, wash and knead. Cover with water, boil and strain. Add sugar to the ready broth and bring to boil again, cool to about 30 degrees and dilute the yeast. Day give the drink to wander in a warm place, then pour into bottles and put on the cold. After three days, the drink is ready. one). Cranberries - 800 gr;

2). Sugar - 300-400 gr;

3). Yeast - 40 gr.

This drink is prepared by fermentation, so it can not be used by patients with peptic ulcer, chronic gastritis, colitis, enteritis. In case of liver diseases and serving, it is also not recommended to use this drink.

After long storage, the kvass becomes cloudy and acquires a bitter-sour taste, which means it is no longer usable.
