If you once bake a cake with this recipe, then never again throw over-ripe bananas. They say that a cupcake recipe comes from Brooklyn, where it is called banana bread. I do not know if this is true, since bananas are added to pastries in recipes from different countries, but the one who invented this is just great. Banana cake turns out very fragrant, slightly moist, it can be soaked with syrup, decorated with any cream, in general, an excellent dessert is made, which is prepared quickly, and eaten without residue.
If the bananas are soft and dark, and there is no time for baking at all, freeze them right on the peel, and the bananas do not lose either taste or flavor when frozen.

Overripe bananas are whipped in a blender until mashed, add to the mixture of butter, sugar and eggs. By the way, darkened bananas can be put in the freezer and thawed before baking.
Cooking dry ingredients. Mix wheat flour, cocoa powder and soda. In a mortar we rub nuts (I had almonds and peanuts, but you can take any nuts to your liking), then grind spices - star anise, cloves, cardamom kernels. Add nuts, spices, ground cinnamon and ground nutmeg to flour. Nutmeg in baking should be added with care, it is enough 1/4 small nut for this cake.
Mix the flour with the liquid ingredients, knead the dough well so that there are no lumps left. Add the zest of three mandarins to the dough, and leave the fruit to prepare the cake soak.
Pour a form of 10x20 centimeters with baking paper, spread the dough, heat the oven to 165 degrees Celsius.
We bake a cupcake for 40 minutes, take out their ovens, remove the paper, cool it on a wire rack.
Tangerines are peeled, divided into slices (can be cut into slices), add sugar, cinnamon and star anise. Cook the syrup for 10 minutes over medium heat, then soak them with another warm cake. Tangerines in this recipe can be replaced with lemons or oranges, and the remaining syrup will always find its use, with it you can make a cocktail.
