Thin pancakes with spinach - a recipe for a quick and tasty breakfast, they can be easily baked in field conditions. If there is no blender at the dacha, the greens can be ground in a mortar with a small amount of salt, or finely chopped with a sharp knife.
In May, the season of the most useful vegetable greens begins - spinach, which contains iron, magnesium, calcium and many vitamins, but the myth that it surpasses all existing vegetables in iron content is unfortunately debunked. The insidious error has crept into the calculations of scientists, in fact, spinach contains only 3.5 mg of iron, and 90% of this useful green consists of water.
Earlier, in tsarist times, spinach was an attribute of an aristocratic table, and for a long time remained little-known, so to speak “master's vegetable”. - 80 g fresh spinach;
- 350 ml of milk;
- 200 g wheat flour;
- 3 g of baking soda;
- 2-3 chicken eggs;
- 5 g of granulated sugar;
- 4 g of fine salt;
- 10 g of vegetable oil + cooking oil;
- butter for lubrication.

Leaves fresh spinach soaked for a few minutes in cold water, remove the stems, rinse thoroughly with running water. Pour milk into the bowl of a food processor, add chopped leaves, grind for 1-2 minutes.
There we add chicken eggs, if they are large, then 2 pieces are enough, you can put three small eggs, then put fine salt and granulated sugar.
Sift wheat flour into a deep bowl, add baking soda, mix it so that the soda is evenly distributed over the volume of flour.
Gradually add liquid ingredients to wheat flour with soda, if you pour them in immediately, the dough will turn out with lumps. Therefore, add in small pieces, each time, mixing thoroughly until a homogeneous dough. When all the ingredients are combined, add vegetable oil and leave the dough for 10-15 minutes.
Heat the frying pan with a thick bottom. Vegetable oil is poured into a small bowl. Brush or half potatoes (can be onions) grease the pan with a thin layer of oil. Pour 2-3 tablespoons of dough, cook for 2-3 minutes on each side.
Every pancake is richly lubricated with high-quality butter, no need to spare and save it! Butter makes pancakes tender and tasty. If you have already decided to fry pancakes (even with healthy spinach) you do not need to save on tasty, after all, there is a spinach salad for healthy eating.
