Vegetable salad for the winter, or a stew of baked vegetables, you can cook in the oven on a baking sheet. This is the easiest way to procure products. Agree, it is convenient to chop the vegetables, put them in the oven and go about their business. In about an hour, everything is ready, all that remains is to pack up the finished salad in jars.
Vegetables cooked according to this recipe can be served as a separate dish or as a side dish for meat. Vegetable snack will be always popular, especially in the long winter, when it is pleasant to open a jar with a fragrant stew that resembles summer.

Ingredients for a stew of vegetables baked on a baking sheet
- 1 kg of zucchini;
- 1 kg of carrots;
- 700 g of eggplants;
- 500 g onions;
- 500 g of bell pepper;
- 300 g tomatoes;
- 1 head of garlic;
- 3 chili peppers;
- 200 g stem celery;
- olive oil (for roasting vegetables and coating with a layer after filling cans);
- 20 g of salt;
- 40 g of sugar;
- 10 g ground paprika.
Method of cooking stews from vegetables baked on a baking sheet
Soak carrots in cold water to make it easier to wash off dirt. Then clean and three on a large grater, instead you can take a grater for Korean carrots or chop the carrot into thin strips.
Peel zucchini peeled and sunflower seeds. The dense part of the pulp is cut into pieces with a thickness of 1.5-2 centimeters.
Cut eggplants in the same way as zucchini. Ripe eggplants with a smooth, blue and elastic skin are suitable for harvesting.
Finely chop the onions, the salad will turn out more tasty if you use a semi-sweet or sweet variety of onions.
Cut off the tails of sweet pepper, remove the seeds, wash under the tap. Cut the peppers into thin strips.
Chili pepper cut into small rings. I added a green pepper, it is not so hot. Carefully add red, hot chili, first try the taste, sometimes one pod is enough for such amount of products.
We clean the head of garlic from the husk, add garlic cloves whole, they do not need to be cut.
Chop red tomatoes arbitrarily, it is important to cut the stem, this part of the tomato should not get into the stew! Celery stalks cut into cubes.
We heat the oven to a temperature of 180 degrees Celsius. We take a large baking sheet, spread all the crushed products on it, sprinkle with sugar and salt, pour olive oil, add ground sweet paprika to enhance the flavor. We mix the ingredients with our hands and send the pan to the preheated oven.
Bake for about 1 hour. Since the heat in the oven is not distributed equally, then every 20 minutes I advise you to gently mix the contents of the pan.
In a weak baking soda solution, wash my lids and jars, dry them in the oven, turning the neck down (temperature 110 degrees).
Fill heated jars with hot vegetables, pour a thin strip of olive oil on top.
Put the jars in a pan with hot water, bring to a boil, sterilize 15 minutes jars with a capacity of 500 g and 25 minutes with a capacity of 1 liter.
Ready-made canned goods are twisted tightly, cooled at room temperature.
