Pork ribs in a pot with pumpkin and mushrooms - a nourishing hot dish for the second in portioned clay pots. Pork must first be marinated in a sweet and sour marinade, and then all that is left is to put all the ingredients in a clay fire-resistant dish and bake in the oven until cooked. I cooked this dish with fresh champignons that are “found” on the market all year round. In the mushroom season, I advise you to add a more subtle flavor to the roast - cook it with wild mushrooms. And in the winter, if you are not too lazy to mess around, boil dried mushrooms and pour a little mushroom broth into the pots.

- 800 g pork ribs;
- 90 g onions:
- 400 g pumpkin;
- 220 g fresh champignons;
- 300 g potatoes;
- 30 grams of dried carrots;
- 5 g ground paprika;
- 4 bay leaves;
- 3 g black pepper;
- 4 leaves of white cabbage;
- salt, vegetable oil.
For the marinade
- 10 g of cane sugar;
- 5 g chili powder;
- 20g of soy sauce;
- 15 ml of balsamic vinegar;
- 20 ml of olive oil.
Method of cooking pork ribs in a pot with pumpkin and mushrooms
Pork ribs are cut along the bones one by one. Put the chopped ribs in a deep bowl, pour the soy sauce and balsamic vinegar, pour the chili powder, cane sugar and mix thoroughly. Then pour olive oil, tighten the bowl with cling film and remove for 3 hours on the bottom shelf of the refrigerator compartment.
Meat must be marinated at least an hour.
When the ribs marinate, you can collect portion pots.
Peel and chop finely onions. Lubricate the clay pots from the inside with vegetable or olive oil.
Pour sliced onion - this is the first layer of roast.
Onion put pork ribs 4-5 pieces per serving, depending on the size of the ribs and the appetite of eaters.
Fresh my champignons. Large mushrooms are cut into 2-4 parts, leaving small ones intact.
On the meat lay out a layer of mushrooms.
We clean the ripe pumpkin with bright orange pulp from the peel, remove the seed bag with seeds. Pulp cut into cubes, put on the mushrooms.

Now we pour seasonings - dried carrots, sweet ground paprika for color and flavor, put 2 bay leaves in each pot, pour several peas of black pepper and table salt to taste.

Pour 100 ml of cold water or beef broth, gently shake the contents so that the salt and seasonings are distributed evenly.
Put the pots with pork ribs on the middle level of the cabinet oven. Gradually heat the oven to 180 degrees Celsius. Cooking pork ribs in pots with pumpkin and mushrooms 1 hour 20 minutes.
