It is usually served on the second day of the wedding, and most likely with the only goal - to alleviate the condition of the body after the degrees taken.
As a rule, the wedding in the village is not played for one or two days, so this drug is more appropriate than ever. There, a clay stove is specially built under the hut, and the famous village cooks are invited, who prepare all the sweets for the wedding table. Cook soup in large cauldrons, and he goes literally instantly.
And if you tried to cook pickle at home. I remember that in Soviet times, in any store, semi-finished products for pickle were sold in half-liter jars. At home it was enough to boil some water in a saucepan or boil the chicken broth, add the contents of the jar and that's it - the pickle is ready. Recipe 1: Chicken pickle
To prepare chicken pickle, please prepare the following ingredients: chicken meat - 300 g; pickles - 2 pcs .; potatoes - 3 pcs .; rice - 50 g; carrot - 1 pc .; onions - 1 pc .; Bay leaf; vegetable oil - 2 tbsp .; chopped parsley and dill - 2-3 tablespoons l .; sour cream - 2 tbsp. l .; pepper and salt.
We take for cooking pickle from chicken and rice. Cut the meat into cubes, put it in a small saucepan and pour half a liter of cold water. Put the pan on the stove and bring to a boil. Immediately reduce the heat and cook the chicken broth in the usual way, not forgetting to remove the foam in time. Cooking broth for about 40-45 minutes.
As long as the broth is on our stove, we will prepare the remaining ingredients. First of all, rinse the rice well, set it aside on a sieve or colander so that the water flows. Diced pickles and set aside on a plate. We clean the potatoes and also cut them into cubes. Chop onions and carrots. In a skillet, we heat up the oil and begin to pass the carrot and onion in it - make sure that the onion does not burn, but just start, without changing its color.
So, our broth has already cooked, and we can send potatoes with rice to the pan. Cook for 10 minutes, after which add browned vegetables, bay leaves and finally, pickled cucumbers to the pan. Why add cucumbers in the end? Remember that pickled cucumbers can be sent to the pan only after the potatoes in the pickle are cooked completely. If you add cucumbers earlier, then you risk that the potatoes will remain half-baked and unpleasant to the taste. Boil for another 5 minutes, add chopped greens to the pickle, season with salt and pepper to taste. Remove from heat.
Let it stand still under the lid in a saucepan for about 5-7 minutes, and we can pour it into plates. Served with sour cream.
Recipe 2: Chicken pickle
This time we will cook pickle with pearl barley, as if a more original recipe for its preparation. Ingredients Required: Chicken - 300 g; 2-3 pickled pickles; 2-3 potatoes; onions and carrots - 1 pc .; tomato paste - 1-2 tbsp .; mayonnaise - 2 tbsp .; vegetable oil - 2 tbsp .; chopped green onions - 2-3 st.l. salt, pepper and bay leaf
Meat for pickle will wash and cut it into cubes of medium size. Pour water into a pot with a wide bottom and send pieces of meat into it. The water in the pan should be no more than 1.5 liters, so that we have a rich broth, respectively, delicious pickle. Cook the broth over medium heat for 45 minutes.
We already have to cook broth, and we will boil pearl barley in another saucepan, we will throw it on a sieve - let it wait for its application. Dice pickles and potatoes into cubes and arrange them separately into plates. Finely chop the onion and rub the carrot on a coarse grater.
Pour some butter into the pan and send onions and carrots to it, sauté over low heat. When the onions begin to brown gradually, add the tomato paste to the pan, stir and mix all together for another 2-3 minutes.
When the broth is already cooked, we will send potatoes and pearl barley to the pan, stir in the ladle and continue to cook your pickle for 10 minutes. After that add the bay leaf, passaged vegetables and cook for another 10 minutes. Now is the time to send pickles to the pickle, season with ground pepper and salt and boil for another 5 minutes. Everything, pickle with pearl barley is already possible to serve. To do this, in each plate, add a little chopped green onions and a spoon of mayonnaise or homemade sour cream - who loves how.
Recipe 3: Suzdal chicken pickle
Prepare the following ingredients: chicken - 1 pc .; dried mushrooms - a handful; 3 pickled pickles; carrot - 1 pc .; onions - 2 pcs .; celery and parsley root - 1 pc. spices, salt, bay leaf and 3 tbsp. oils.
Pour some water into the pan and set it on medium heat. Divide the chicken into portions and lower stew. In a bowl, soak the dried mushrooms and put them to boil in a separate saucepan. When they are cooked, we will fold them into a colander, but first we pour glasses of the broth in which they are boiled. Cool some mushrooms and cut them into strips and dip them to the chicken. Fill a glass of mushroom broth and continue to cook.
Cut the onion into half rings, cut celery and parsley roots into strips. Pour the butter into the pan and fry the chopped vegetables in it.
Clean pickled cucumbers from thick peels, remove the seeds if they are large, and cut them into diamonds or squares. Chop the potatoes and send them to the broth in which the chicken and mushrooms are boiled. After 10 minutes, send them roasted vegetables, season with spices, salt and pepper to taste. Cook until fully cooked potatoes and add cubes of pickled cucumbers. Boil another 3-4 minutes, add chopped greens and remove from heat. Cover the pan with a saucepan and set aside so that the pickle still retains 10-20 minutes. In each plate, add chopped green onions and a spoonful of thick homemade sour cream.
