Preparing the perfect steak is quite a challenge even for professionals, to mention the novice hostesses.

How to Grill a Steak - Basic Cooking Principles

For starters, choose meat for steak. A piece of meat should be with even patches of fat, which will melt during cooking, which will make the meat juicy and tasty. As a rule, steaks are made from beef or pork. The taste of steak depends on its thickness. The optimum thickness of the pieces should be 2.5 centimeters.

When purchasing ready-made meat for steaks, make sure that the pieces are the correct thickness.

Frozen meat is taken a day before cooking from the freezer and left in the refrigerator until it is completely thawed.

Steaks do not beat off, otherwise the structure of the meat will be broken, and it will lose its tenderness and juiciness.

A piece of meat roll in a mixture of salt, herbs and spices. Then grease it from both sides with vegetable oil so that the meat does not burn, and the heat inside is evenly distributed.

How much to fry steak. According to the degree of roasting steaks are of several types:

- with blood - fry for two minutes on each side, then leave to rest for six minutes;

- weak cooking - fry for 2.5 minutes on both sides, leave to rest for five minutes;

- average frying - three minutes on each side, leave to rest for 4 minutes;

- well done - 4.5 minutes on each side, leave to rest for a minute.

Recipe 1. Pork steak in ginger marinade


four pork steaks (120 g each);

vegetable oil;

10 g grated fresh ginger;

50 ml of soy sauce;


Method of preparation

1. My orange and wipe with a napkin. Using the finest grater, remove the zest from it. From the pulp squeeze a quarter cup of orange juice. In a deep bowl mix soy sauce with zest and orange juice.

2. Dip pork steaks in this marinade so that it is evenly distributed over the entire surface of the meat. Leave the meat to marinate for an hour.

3. Heat a large griddle on a small fire and lubricate the bottom with vegetable oil. We take out steaks from the marinade and spread them on a hot frying pan. Fry for five minutes on each side. Shift steaks on a plate, cover with foil or lid to keep warm.

4. In a frying pan, where steaks were fried, pour the marinade and bring it to a boil. Boil it for a minute and pour the sauce obtained pork steaks. Serve steaks with vegetable salad or side dish.

Recipe 2. Beef steaks with hot sauce


four beef steaks, 2.5 cm thick;

vegetable oil;

30 g horseradish sauce;

a pinch of sea salt;

15 g grated fresh ginger;

a pinch of red pepper;

15 ml of soy sauce;

15 ml of liquid honey.

Method of preparation

1. Turn on the grill so that it warms up to a high temperature.

2. Ginger root clean and three on a fine grater. Put it in a bowl, add horseradish, ground red pepper, soy sauce and honey. All mix well with a fork until smooth.

3. Steaks are washed under the tap and dried with paper napkins. Put the meat on the board and grease each piece with vegetable oil on both sides. Sprinkle with salt.

4. Put the steaks on the grill and fry for about two minutes, then turn the meat over and fry on the other side for another two minutes. Turn over the steaks again, brush with half the sauce and cook a minute, turn over, brush with the remaining sauce and grill for another two minutes.

Recipe 3. Marsala steak flambé


Half a kilo of veal; ground black pepper;

50 grams of cheese;

kitchen salt;

50 ml of vegetable oil;

50 ml of wine “Marsala”.

Method of preparation

1. Cut the meat into steaks, three centimeters thick. Rinse under running water and dip over with napkins.

2. Finely rub the cheese. Pour it onto a flat plate.

3. Breaded meat in cheese shavings.

4. Heat vegetable oil in a pan. Quickly fry the steaks in it until an appetizing crust appears. After three minutes, turn over a piece of meat, salt, pepper and fry for another two minutes.

5. Set the pan on the board, pour the wine over the steak and set it on fire. Use for this match for the fireplace or a long torch. Prepare cover to extinguish too strong flame. The wine should be warm.

Recipe 4. Grilled beef steak with tomato salsa


three beef steaks;

kitchen salt;

a tomato;

10 g brown sugar;


20 g chili powder;

half red bell pepper;

40 g fresh thyme;

three cloves of garlic.

Method of preparation

1. My tomato and finely chopped. Peeled onions finely shred. Bulgarian pepper cleaned of seeds, take half and chop finely. Garlic free from husk and pass through the press.

2. Put two thirds of the whole garlic in a deep dish, lightly salt and mash. Add half the finely chopped thyme, brown sugar, chilli powder, 30 g of salt and 10 g of ground black pepper. All mix well.

3. Put the beef steaks on a baking sheet and rub them with a mixture of spices, cover and send to the refrigerator for at least four hours.

4. In a separate bowl, mix onion, tomato and Bulgarian pepper with olive oil. Pour in vinegar and a quarter cup of filtered water. Add the remaining garlic and thyme, 10 g of salt and 5 g of black pepper, ground. Stir well, close tightly and send to the fridge.

5. Heat the grill until the temperature is too high. Put the steaks on the grill and fry for four minutes on each side. Then cover the grill with a lid and cook steaks for another six minutes on each side. 6. We transfer the steaks to the board, cover with foil and leave to rest for five minutes. Then cut them into slices, spread on a plate and pour all the salsa.

Recipe 5. Steaks in bacon with fragrant oil


700 g beef fillet;

two pinches of ground black pepper;

four strips of bacon;

two pinches of salt.

Fragrant oil

80 g butter;

5 g lemon peel;

50 grams of cheese;

20 g fresh parsley.

Method of preparation

1. Heat up to medium-high temperature grill. Lubricate the grille with oil.

2. Remove the butter from the fridge so that it becomes soft. Cheese finely three and mix it with butter. Add the chopped parsley, lemon zest, salt and mash all with a fork. Spread butter on cling film and wrap in the form of sausages. Sent for half an hour in the fridge.

3. Cut the beef fillet into four steaks, 3.5 centimeters thick. Each piece of meat is wrapped in a slice of bacon. Tie the bacon with string and lubricate a piece of meat with butter. Season with salt and pepper from both sides.

4. Put the steaks on the rack and fry for four minutes on each side. We shift the meat on the board, cover with foil and leave to rest for five minutes.

5. Remove strings from steaks. For each put a piece of fragrant oil and serve with any side dish or vegetable salad.
