Eggs stuffed with “red caviar” from herring, carrots and melted cheese is a simple but incredibly tasty snack of herring and eggs, which even a child can cook. You can take a ready-made salted herring fillet and a jar of herring caviar for cooking, or buy a whole salty Pacific herring, asking the seller for fish with caviar.
In the old days, eggs stuffed with herring and melted cheese were often cooked on a festive table along with Russian salad, fur coat and mimosa. I remember how in childhood we rejoiced, if in the morning after the holiday feast in the fridge “red caviar” of herring remained. Honestly, a jar of ordinary caviar did not evoke such emotions!

- 6 large chicken eggs;
- 300 g herring fillets;
- 60 g of herring roe;
- 2 processed cheese;
- 1 boiled carrots;
- 50 g of mayonnaise;
- greens for decoration.

Melted curds put for 1 hour in the freezer, then rub on a small grater. Frozen curds are easy to rub, do not stick to the grater and hands.
By the way, cheese curds are different! Not every variety is suitable for this salad. To keep the tradition, take the "Friendship" or "City".
Then, also on a fine grater, three boiled carrots. A lot of carrots are not needed, just one small one.
Cook hard-boiled chicken eggs, cool, clean. Cut eggs along in half, we get yolks. Proteins leave for the filling, grind the yolks, add to the rest of the ingredients.
So that the stuffed eggs do not “scatter” on a plate, you need to make small cuts on the back side of the egg halves.
Fish fillet and caviar skipped through a meat grinder, finely chopped with a sharp knife or chopped in a blender.
Add mayonnaise to the filling. Mayonnaise can be replaced with softened butter, then the taste of the dish will be more tender.
Thoroughly mix the ingredients with a spoon, remove for 10 minutes in the refrigerator.
Fill the halves of egg whites with stuffing, make a big hill, so tastier and more beautiful.
Decorate the finished dish with strips of mayonnaise, sprinkle with a green onion. For decoration, real red caviar and green salad leaves are also suitable, on which you can place a snack.
