Georgian green beans are a tasty dish of vegetarian cuisine, which includes only products of plant origin. If you are looking for recipes for the lean menu, then this recipe is also for you. Everything is prepared very simply. First we put a griddle with vegetables on the stove and, while they are fried, we make a sauce of walnuts, garlic and lemon juice. Then we mix everything and serve it on the table, in general, the dish from the series “there is no easier way”.
Unripe beans of ordinary beans (green beans and asparagus beans) are fried, boiled, and stewed. Especially interesting are the recipes from this vegetable for those who decided to lose a few extra pounds, because in 100 grams of green beans barely 24 kilocalories is recruited. Of course, in combination with peanut sauce, the dish is nourishing, but then, even people on a diet need something to eat!

Ingredients for Georgian Green Beans:
- 400 g green beans;
- 50 g red bell peppers;
- 80 g leek;
- 65 g peeled walnuts;
- 1 \ 2 lemon;
- 3 cloves of garlic;
- 120 ml of boiled water;
- 5 g of sea salt;
- olive oil, spices to taste.
Method of cooking Georgian green beans in
Pour 2 tablespoons of high-quality olive oil into the pan, then toss the leek, chopped into small rings. Please note that there may be sand between the leek leaves, so carefully rinse the greens with running water!
We clean the sweet Bulgarian pepper from the seeds, rinse it under the tap, cut the flesh into small cubes. Add chopped peppers to leek.
Then pour green string beans into the pan. I was preparing a dish of frozen vegetables. Fresh pods need to be pre-cleaned - cut off the tips, get a tough vein and cut into cubes.
Cooking vegetables on moderate heat for 10-12 minutes, stirring occasionally.
While the vegetables are fried, we make traditional Georgian sauce bazhe. There are many options for its preparation - with broth, with pomegranate, with vinegar, with cilantro. Since our recipe is vegetarian, let's make a bage on the water. Peeled walnuts put nuts for a few minutes in cold water, then rinsed, dried in a hot frying pan.
Boil water, cool to room temperature.
Peel garlic cloves.
Pound garlic and nuts in a mortar with salt, put in a mixer, pour the cooled water. Squeeze juice out of half a lemon.
Beat the ingredients until a uniform, light-colored paste is obtained, this is “bage”. We taste, if you need to add a little more salt to taste, and if the sauce turned out to be very thick, pour water and whisk again.
Put the sauce on a plate. By the way, if you are a fan of Georgian seasonings, then ukho suneli will do here, a small pinch will be just right.
Put warm vegetables on the sauce and serve immediately to the table.
