  • Marinating in a fast way can be both ripe and unripe watermelons. If you are unlucky and you have purchased a pink and not enough sweet watermelon, a good idea would be to turn it into an extraordinary snack.
  • For quick pickling, watermelon must be cut into pieces. The smaller they are, the faster they will marinate. Usually, the watermelon is cut into triangles with a thickness of 1.5-2 cm, sometimes a little larger. Whether cutting off the crusts or pickling the flesh with them depends on the recipe, but the cook can make his own adjustments to this question. With skinned pickled watermelon slices look more appetizing, but they have to wait for readiness to wait a little longer.
  • You can pickle watermelon in jars and other glass containers, plastic containers and enameled bowls, pans. Tanks should be roomy. Aluminum pans will not work: this material, when in contact with acids, forms harmful substances, giving the snack an unpleasant metallic aftertaste.

A simple recipe for marinated instant watermelon


  • watermelon - 5 kg;
  • water - 4 l;
  • table vinegar (9 percent) - 0, 25 l;
  • sugar - 0, 25 kg;
  • salt - 125 g.

Method of preparation:

  • Wash the watermelon, cut it into 4 pieces lengthwise, cut each part into slices about 2-3 cm wide. Fold into a saucepan. Putting pieces of watermelon in the pan will be easier if you put them in the shape of a circle in which the slices are sectors.
  • Boil water in a separate saucepan. Add salt and sugar to it. Boil, stirring, until the crystals of salt and sugar are completely dissolved.
  • Pour in vinegar, stir. As soon as the marinade boils again, remove it from the heat.
  • Fill the watermelon with hot marinade, cover the pan with a lid. Leave for 2-3 hours at room temperature, then store in a cool place, ideally in a refrigerator.

It will be possible to taste a watermelon pickled according to this recipe in 10-12 hours, but it is better to be patient and wait a whole day - then the snack will become much more tasty.

Watermelon marinated in a quick way with garlic and spices


  • watermelon - 2 kg;
  • garlic - 2 cloves;
  • fresh dill - 2 pcs .;
  • carnation - 2 pcs .;
  • bay leaf - 2 pcs .;
  • allspice peas - 5 pcs .;
  • black pepper peas - 5 pcs .;
  • table vinegar (9 percent) - 60 ml;
  • salt - 20 g;
  • sugar - 60 g;
  • water - 1 l.

Method of preparation:

  • The watermelon, having washed and dried with a napkin, cut into triangular slices with a thickness of 1.5-2 cm.
  • Cut the garlic cloves into thin plates.
  • Wash the spices. At the bottom of the pot or a large bowl, place the fennel sprigs.
  • Top with slices of watermelon, sprinkling them with chopped garlic.
  • Boil water, dissolve sugar and salt in it. Add spices, boil for 5 minutes.
  • Pour in vinegar, stir, remove from heat.
  • Pour marinade on watermelon slices, cover with a plate. On top, install a jar of water.
  • When the marinade has cooled, remove the oppression, transfer the container with the watermelon slices to the refrigerator.

It will be possible to serve a snack to the table in 6-8 hours, but if you give the watermelon to marinate for a day, it will be even better.

Marinated instant watermelon with pepper


  • watermelon - 2 kg;
  • Bulgarian pepper - 0, 4 kg;
  • bitter peppers - to taste;
  • garlic - 4 cloves;
  • water - 1 l;
  • salt - 10-15 g;
  • sugar - 50 g;
  • apple cider vinegar (6%) - 50 ml;
  • bay leaf - 1 pc .;
  • carnation - 3 pcs .;
  • a mixture of peppercorns - 5 g;
  • currant leaves - 2 pcs .;
  • horseradish leaves - 1 pc .;
  • Dill umbrellas - 1 pc.

Method of preparation:

  • At the bottom of a capacious container or other container in which you plan to pickle watermelon, put garlic, horseradish, dill umbrella, and currant leaves finely chopped with a knife. You can add a bunch of currant berries.
  • Wash the watermelon. Cut. Use a sharp knife to separate the flesh from the skin.
  • Cut the watermelon flesh into thin slices or pieces of a different shape, but not larger than 3 cm.
  • Peppers, sweet and bitter, peeled from seeds and finely chopped.
  • Fill the container with pieces of watermelon pulp, sprinkling them with chopped pepper.
  • Boil the water. Pour sugar, salt, spices. Boil for 5 minutes.
  • Remove from heat, mix with vinegar.
  • Pour the watermelon slices in the marinade just cooked. Wait until the marinade has cooled, put the watermelon in the fridge.

After 12 hours, the appetizer for this recipe is completely ready for use. It has a spicy taste and will appeal to lovers of spicy dishes.
