Cooking Features

For the manufacture of cranberry tincture, you can use both fresh and frozen berries. Insist it on any alcohol-containing drinks: vodka, alcohol, brandy. Production technology depends on the specific recipe, but the principles remain common.

  • Cranberries are able to refine any alcohol, even a home-brewed product of average quality. However, from a quality base and tincture get a more pleasant color, it will not have extraneous odors. In order not to translate the valuable berry in vain, insist on high-quality alcoholic beverages.
  • Frozen berries are suitable for preparing infusions as much as fresh ones. It gives even better juice, thanks to which the tincture acquires a richer taste and color. Some winemakers even put fresh cranberries for a day in the freezer, so that she could freeze and lose the bitter taste.
  • If you decide to make an infusion of fresh berries, pierce each cranberry with a clean needle in 3-4 places. Experienced winemakers bind 3-4 needles to speed up the process in order to pierce the berries in several places at the same time. This trick improves the secretion.
  • Another way to give the tincture a bright taste and aroma is to pre-ferment the berries. When choosing an appropriate recipe, you cannot use purchased and frozen berries, even if you yourself have collected and frozen it. Fermentation is possible only if there are bacteria on the surface of the berries that cause it. Otherwise, the berries turn sour, never fermented.
  • Do not add too much sugar to your cranberry tincture when preparing it. It is better to sweeten it after sugar syrup. For sweetening, it is recommended to insist on drinking for another 2 days.

Cranberry tincture is well preserved for several years, and over time its taste becomes deeper and softer. Keep it in a dark, cool place, but not necessarily in the refrigerator.

A classic recipe for cranberry liqueur on vodka

Composition:

  • cranberries - 0, 25 kg;
  • sugar - 20-30 g;
  • water - 40-60 ml;
  • vodka - 0.5 liters.

Method of preparation:

  • Sort out the cranberries, pierce with a needle or freeze by placing them in a freezer for a day.
  • Pour the berry into a clean liter jar.
  • Dissolve sugar in water. Heat, stirring, and boil for 5 minutes. Cool the syrup to room temperature, pour into the jar of berries.
  • Pour vodka into the jar, close it with a lid, put in a place protected from light.
  • Insist at room temperature for 2 weeks. Every two or three days, turn the jar, thus stirring its contents.
  • Strain through gauze folded in several layers, taste the taste. If the drink seemed too sour, boil some more sugar syrup, add to the drink, stir, leave for 48 hours, then strain again.

The finished tincture is bottled, tightly closed and stored at a low temperature not in the light. You can put the drink in the fridge - it will be most comfortable there.

Original recipe for cranberry tincture

Composition:

  • cranberries - 0.5 kg;
  • sugar - 60-80 g;
  • moonshine or diluted alcohol with a strength of 40-45% - 2 liters.

Method of preparation:

  • Sort out fresh, unwashed cranberries, pour them into a bowl or small bowl, remember with a wooden crush.
  • Pour sugar, mix, cover with gauze, leave for 48 hours.
  • When the berry mass starts to foam, put it in a three-liter jar, pour it with diluted alcohol or moonshine in the amount of 1 liter. Close and store in a warm place, protected from bright light.

Composition:

  • cranberries - 0, 25 kg;
  • pure medical alcohol (ethyl) - 0, 25 ml;
  • sugar - 0, 25 kg.

Method of preparation:

  • Fill with alcohol, leave for a week.

Composition:

  • cranberries - 0, 25 kg;
  • sugar - 150 g;
  • Moonshine or diluted alcohol (up to 45 degrees) - 0, 25 liters.

Method of preparation:

  • Berry, sorting through, fill with boiling water. After 5 minutes, drain in a colander.
  • Place cracked berries in a small saucepan, mix with sugar. Leave for 2 hours.
  • Remember the berries, pour with alcohol, mix, put the pan on a slow fire.
