Flapjacks - thin layers of dough, baked in the oven or fried in a pan. They can be made from different types of flour, with or without fillings. They are eaten instead of bread or as an independent snack, adding to the sauce, served with tea and wine. The easiest way to knead the dough for cakes in the pan, as it is usually made bland. Such products can be prepared fairly quickly, and they will cost inexpensive, but will certainly please guests and household members.

Even an inexperienced cook will be able to fry flapjacks in a pan, as the dough is prepared quickly and simply for them. Knowing a few points will allow you to get the expected result.

  • You can use not only wheat flour, but also rye, corn, and other grains to make flat cakes in a pan. The only important thing is that it is not of low quality. Second-grade flour can give the product an unpleasant taste.
  • From whatever flour you bake cakes, you must sift it before use. This is done not only in order to clear the product from the larvae of the flour moth and small litter. The main task is to saturate the flour with oxygen. After sifting, it becomes light, well connected with other components, without forming lumps. Products from such flour turn out more gentle and air.
  • The simplest dough recipe for lozenges includes only three ingredients: water, flour, and salt. However, to make the products more pleasant taste and increase the elasticity of the dough, vegetable oil, eggs, butter or margarine, cheese, cottage cheese, spices and herbs are added to it, they are kneaded not with water, but with milk, kefir and other dairy products. If you want the cakes turned out lush, you can add soda or other baking powder.
  • The dough for the cakes is kneaded by hand and for a rather long time in order for the gluten contained in the flour to be released. After kneading, the dough is allowed to rest for half an hour. During this time, the gluten will have time to swell, and the dough will become more pliable. To prevent the dough from becoming chapped, it is smeared with vegetable oil or put into a plastic bag and wrapped with cling film.
  • There are two ways to form cakes. If you want to make thin and large flat cakes, a piece of suitable size is separated from the dough (it depends on the area of ​​the pan) and rolled out with a rolling pin. To make small cakes, dough is torn from a dough with a quail egg or a little more, rolled into a ball and flattened to the desired size between the palms.
  • Most often, the cakes are fried in a dry frying pan. So that the dough does not stick, you need to heat the pan well. Suitable cast iron dishes or having a high-quality non-stick coating. If you are not sure of the quality of the pan, and there is no fat in the dough for the tortilla, you can grease the pan with a thin layer of oil using a cooking brush.

Finished flat cakes are stacked and covered with a towel so that they do not dry out. If not all of them are eaten immediately, then the next day they can be sprinkled with water and heated in a microwave.

Simple dough recipe for cakes

Composition:

  • wheat flour - 0, 3 kg;
  • water - 150 ml;
  • salt - 2 g;
  • refined vegetable oil - 20 ml.

After half an hour, the dough can be divided into 4-6 parts, rolled into round layers and fry cakes.

Dough for fried bread with milk and egg

Composition:

  • milk - 0, 2 l;
  • wheat flour - 0, 4 kg;
  • salt - 5 g;
  • sugar - 10 g;
  • chicken egg - 1 pc .;
  • refined vegetable oil - 40 ml;
  • seasonings to taste.

Method of preparation:

  • In the bowl, break an egg, add salt and sugar to it. Whisk the products with a whisk. Beat until needed, until the mass brightens.
  • Lightly heat the milk (to a temperature just above room temperature). Try not to overheat it, as eggs will roll up from hot milk.
  • Pour milk to the egg mass. Whisk the products with a whisk together.
  • Add butter. Whisk the liquid mixture again. As a result, it should be homogeneous.
  • Sift flour, mix it with spices. You can add paprika, turmeric, dried herbs.
  • Pour the flour into a bowl of liquid foods, stir with a spoon.
  • Put the dough on a floured countertop, complete the kneading process with your hands.
  • After forming a bun from the dough, place it in a plastic bag and leave it at room temperature for 30 minutes.

After a specified time, the dough can be taken out of the bag and proceed to the formation of cakes.

Dough for corn tortillas fried in a pan

Composition:

  • corn flour - 0, 35 kg;
  • butter - 80 g;
  • milk - 0, 2 l;
  • salt - 5 g.

Method of preparation:

  • Combine milk with melted butter, add salt to them, mix.
  • Combine the liquid mixture with flour, mix the products well.

The cakes from this dough are fried, spreading with a spoon on a preheated and buttered pan.

Dough on kefir for cakes in the pan

Composition:

  • wheat flour - 0.5 kg;
  • kefir - 0, 4 l;
  • chicken egg - 1 pc .;
  • soda - 5 g;
  • salt - 5 g;
  • refined vegetable oil - 60 ml.

Method of preparation:

  • Remove the kefir and egg from the refrigerator in advance so that they can warm up to room temperature by the time the dough is prepared.
  • Mix sifted flour with soda. It is not necessary to quench it, since kefir contains a sufficient amount of acid to obtain the necessary reaction and neutralize soda taste.
  • In a clean bowl, break an egg, salt it, and whisk it.
  • Pour the fermented milk product and refined vegetable oil into the bowl with the egg. Beat the products with a whisk or mixer until they turn into a homogeneous liquid mass.
  • Enter the dry mixture, knead the soft but not sticky dough.
  • Cover the dough with a bowl and let it rest for 20 minutes.

From the dough on kefir, the cakes turn out to be fluffy and tender, do not get stale for a long time.

Flakes in a pan can be fried from different types of dough. It can be lean or mixed with milk, kefir, with the addition of butter and eggs. All food options are good in their own way and have their fans.
