Cucumbers in tomato sauce, which are not difficult to make for the winter, have an unusual look and taste. This snack is surprising and makes you want to try it again.   • Cucumbers before preservation must be thoroughly washed and soaked for several hours (from 2 to 6) in cold water. Cucumbers in tomato sauce - a classic recipe with sterilization

Composition (4, 5 l):

  • cucumbers - 5 kg;
  • water - 1, 5 l;
  • tomato sauce (sweet and sour) - 0, 2 l;
  • table vinegar (9 percent) - 100 ml;
  • salt - 60 g;
  • sugar - 100 g;
  • vegetable oil - 50 ml;
  • black pepper peas - 5 pcs .;
  • allspice peas - 5 pcs .;
  • bay leaf - 1 pc .;
  • dill umbrellas - 6-9 pcs .;
  • onions - 0, 25 kg;
  • garlic - 6-9 cloves.

Method of preparation:

  • Rinse cucumbers, cut around the edges and soak in cold water for 3 hours. Rinse again and let dry.
  • Boil water, dissolve tomato paste in it, pour in vinegar, oil, add salt and sugar, add bay leaf and pepper. Boil the resulting mixture for 15 minutes.
  • Wash the dill, peel the onion and garlic. Onion cut into rings, crush the garlic with a special press.
  • Sterilize jars of the same size. It is best to take nine half-liter or six 750-gram.
  • At the bottom of each jar put an umbrella of dill.
  • Spread cucumbers on the cans, carefully tamping them. If the fruits are of medium or large size, then they must be cut into columns of 2-4 cm in height.
  • Cover the cucumbers with onion rings, put a crushed garlic clove on top.
  • Fill the cucumbers with hot marinade from tomato sauce.

Composition (4, 5 l):

  • cucumbers - 5 kg;
  • water - 0, 5 l;
  • tomato paste - 0, 5 l;
  • table vinegar (9 percent) - 100 ml;
  • sugar - 100 g;
  • salt - 50 g;
  • garlic - 3 heads;
  • bay leaf - 6-9 pcs .;
  • carnation - 6-9 pcs .;
  • parsley - 6-9 sprigs.

Method of preparation:

  • Wash the cucumbers, cut off their tips, cover with cold water and leave for 3-4 hours.
  • Drain, rinse cucumbers, let it drain. If cucumber fruits are large, cut them into several pieces.
  • Sterilize the jars. At the bottom of each place on a sprig of parsley, on a bay leaf and carnation.
  • Peel the garlic and place it in cans.
  • Fill the jars with cucumbers, trying to stack them as tightly as possible.
  • Boil water and cover cucumbers, cover with a lid and leave for a quarter of an hour.
  • Through a special plastic lid with holes and spout, pour water into the pan.
  • Bring the drained water to a boil, refill it with jars of cucumbers and leave for 15 minutes.
  • Again, pour water into the pan, measure its quantity. In the recipe, the amount of tomato paste and other ingredients is indicated on the basis that 2 liters of pickle is required. If it turns out that it needs less or more, then the number of ingredients will need to be changed proportionally.
  • Cook the marinade from tomato paste, sugar, salt, vinegar and water. Water can be taken clean or drained from cans of cucumbers. Marinade bring to a boil and boil for 15 minutes, then pour them cucumbers.
  • Roll up the jars, turn them over and wrap them to cool. After the banks have cooled down, put them in storage for winter storage.

Despite the lack of sterilization, a snack prepared according to a simple recipe is very well kept under normal conditions. It turns out it is spicy and fragrant, with a pleasant sourness.

Composition (4, 5 l):

  • cucumbers - 5 kg;
  • tomato sauce (preferably “Krasnodar”) - 0.5 l;
  • onions - 0.5 kg;
  • garlic - 3 heads;
  • vegetable oil - 150 ml;
  • sugar - 100 g;
  • salt - 50 g;
  • table vinegar (9 percent) - 100 ml;
  • water - 0, 25 l.

Method of preparation:

  • Soak cucumbers, rinse and cut into semicircles with a thickness of about 2-3 cm. Place in a saucepan.
  • Mix the sauce with water and vinegar.
  • Peel the onions and garlic, turn them through the meat grinder and add to the tomato mixture.
  • Put the same salt, sugar, stir.
  • Pour in the oil and mix again.
  • Pour the resulting mass of cucumbers and put the pan on the fire.
  • Cook the snack on low heat until the cucumbers change color.
  • Spread over the cans and, with the covers covered, sterilize them for 10-15 minutes.
  • Roll up the cans. Leave to cool under the blanket upside down. After cooling, remove the storage at any place convenient for you - the snack is well worth it at any temperature.

Spicy Cucumbers in Tomato Sauce

Composition (4, 5 l):

  • cucumbers - 5 kg;
  • tomato paste - 100 g;
  • water - 100 ml;
  • vegetable oil - 150 ml;
  • sugar - 100 g;
  • salt - 50 g;
  • garlic - 0, 2 kg;
  • table vinegar (9 percent) - 100 ml;
  • paprika spicy - 5 g;
  • black ground pepper - 5 g.

Method of preparation:

  • Cut the prepared cucumbers into columns about 3 cm high, put them into a thick-walled pan.
  • Mix the butter, salt, sugar, paprika and black pepper, tomato paste mixed in half with water. Pour the cucumber with the resulting mixture and set on low heat.
  • After the sauce has begun to boil, stew the cucumbers in it for 15 minutes.
  • Add garlic, passed through the press, and vinegar, mix.
  • Hold the cucumbers on fire for another couple of minutes, then turn off the stove.
  • Fork cucumbers spread on pre-sterilized banks. Top with the remaining sauce in the saucepan. Cover with clean lids.
  • Sterilize jars with snacks in a saucepan with water for 20-30 minutes, depending on the size of the jars.
