Green rice with meatballs - tasty and original hot dish. Very simple foods can always be prepared so that they look very exotic and taste very good. From the usual cereals and minced meat for an hour, you can prepare an appetizing and bright lunch in the South Asian style. Spinach mashed potatoes will color everything in a bright green color, hot pepper and ginger will give a sharp, savory notes, and juicy meatballs will complement this Asian pilaf.
Instead of brown rice, you can take regular white, but be sure to choose crumbly varieties.
Spinach puree is easy to make from fresh herbs if there are no canned or frozen supplies.

Ingredients for green rice with meatballs
- 200 g of brown rice;
- 50 g mashed spinach or 80 g fresh spinach;
- 4 chili peppers;
- 70 g green onions;
- a slice of fresh ginger;
- 3 cloves of garlic;
- 25 g butter;
- salt, olive oil for frying.
For meatballs:
- 500 g lean meat or chicken mince;
- 1 egg;
- onion head;
- a small bunch of dill;
- ground paprika, cutlet spices, salt.
Method of cooking green rice with meatballs
In a small stewpan with a thick bottom and a tight-fitting lid, pour 250 ml of water, add 3-4 g of salt and butter. When the water warms up and the butter melts, pour well-washed brown rice. After boiling, reduce the heat and tightly close the lid. Cook on low heat for 20-25 minutes.
While the cereal is being prepared, we will deal with the rest of the ingredients of our dish. First, make meatballs - in a deep bowl, combine the minced meat with egg, salt, finely chopped onion and chopped dill. Pour ground paprika, seasoning for meatballs, mix well. You can also add a bit of white breadcrumm soaked in milk or ground crackers to the mince, this will make the burgers more tender.
We make small meatballs the size of a ping-pong ball out of minced meat. Heat the oil in a frying pan with a non-stick coating. Fry on both sides until golden brown.
Separately, fry for 2-3 minutes in a strongly heated pan, whole pods of red chili peppers (impaled with a fork), a finely chopped piece of ginger, garlic and chopped green onions.
Take ready-made canned mashed spinach, add 2-3 tablespoons of cold water to it. Instead of the finished mashed potatoes, you can quickly process the fresh spinach. To do this, put the washed leaves without the stems into boiling water for 5 minutes, then turn back to the sieve. Put the leaves in a food processor, add a little boiled water and turn into puree.
Add the spinach puree and the browned vegetables to the rice, stir until the rice turns bright green.
At the bottom of the roaster pour a tablespoon of vegetable or olive oil. Put the rice with vegetables, meatballs on top. Put the brazier on a small fire, warm up the dish for about 10 minutes.
Serve green rice with meatballs to the table hot, decorate with fresh greens and hot peppers.
