- 1 small forks of young cabbage;
- 2 chicken eggs;
- 50 g wheat flour;
- 100 g breadcrumbs;
- 50 ml vegetable oil for frying;

Fork young white cabbage cut in half. This dish can be prepared from late cabbage, but only from individual leaves. Late vegetable will not be able to quickly boil in a head of cabbage, and the dish will lose its zest.
Cut the halves of the head still in half or into three parts depending on the size. The stump is not cut out completely. Try to show the wonders of virtuoso cutting and leave a thin piece of the stalk so that cabbage leaves do not scatter when cooking.
In young vegetables, the stalk is tender, it will be prepared equally with the leaves.
Put the sliced pieces in a small saucepan, add 1-2 teaspoons of table salt, pour boiling water so that the water completely hides them.
Cook for 6-7 minutes after boiling over moderate heat. Gently pull, lay out on a sieve or colander to glass the water and the pieces cooled.
First, we pan the cabbage in wheat flour. Any breading usually begins with this. If for some reason you do not want to add flour to the dish, then at this stage it can be replaced with potato or corn starch.
Mix raw chicken eggs with a small pinch of salt, stir the eggs with a fork so that the whites and yolks join together. Dip the flour-covered cabbage into the egg mixture.
Next, put the cabbage in breadcrumbs, roll on all sides so that the crackers completely cover the vegetable. You can cook the crackers at home in the oven. To do this, cut the loaf into small cubes and dry it in the oven until golden brown at a temperature of about 120 degrees Celsius. Then grind the loaf in a food processor.
In a frying pan with a non-stick coating or in a cast-iron skillet, heat 2-3 tablespoons of olive oil, fry the schnitzels in turn until golden brown on each side. In our case, the cutlet has three sides.
