Salad with young cabbage, ham and crackers - a spring snack based on the classic “Caesar”. Of course, for Caesar, Iceberg lettuce, cherry tomatoes and Parmesan are needed. However, the partial replacement of ingredients is quite acceptable, moreover, it turns out very tasty and easy in spring. Salad made according to this recipe is suitable for the diet menu, as it is made from low-fat products and without mayonnaise.
For making croutons, take wheat-rye bread from whole-grain flour, it’s good if there are any seeds in it - flax, sunflower, pumpkin.
I was cooking this snack from smoked chicken breast (without skin). You can replace the breast with boiled chicken, chicken ham or boiled beef.

- 200 g smoked chicken breast;
- 300 g young cabbage;
- 150 g fresh cucumbers;
- 50 g of hard cheese;
- 150 g of whole grain toast bread.
- 10 ml of soy sauce;
- 20 ml of olive oil;
- 10 g of mustard;
- sugar, salt, pepper.

Remove skin from smoked chicken breast, separate meat from bones. Cut fillets in small cubes.
Add chopped chicken in a salad bowl.
Rub a small slice of hard cheese on the cheese grater, add to the remaining ingredients. Hard cheese can be replaced with feta or cheese, the taste of ready-made salad from fresh cabbage with ham and crackers will be slightly different, but the variety is always pleasant.
Mix the sauce. Combine table mustard in a bowl with soy sauce and extra virgin olive oil of the first cold-pressed variety, pour a pinch of sugar and salt to taste. The sauce can be shaken in a small jar with a tight-fitting lid; this is a very convenient way of preparing salad dressings.
Dry in a toaster a couple of slices of toast bread from whole-grain flour until golden brown. Cut the toast in small cubes.
Add the croutons to the bowl of fresh cabbage and ham salad and season with the sauce, mix well.
