- 80 g coconut pulp;

- 75 g butter;

Method of making muffins with coconut
We pierce a fresh coconut with a sharp knife in two places (where the grooves are located) and pour coconut milk from it. We mix butter and sugar in a 1: 1 ratio in a blender until a homogeneous, light yellow cream is obtained. Oil should be at room temperature, slightly softened.
Add wheat flour with soda or baking powder to the whipped mass, self-rising flour can also be used.
Put sour cream in the dough, then an egg. Gently mix to avoid lumps. Sour cream in this test can be replaced with kefir or sour milk.
Take half a fresh coconut. We remove from it a brown peel, we rub on a small grater. From half a medium-sized coconut, approximately 80 grams of finished pulp is obtained. Add coconut and raisins to the dough, mix gently again.
To make cupcakes beautiful, look elegant and festive, be sure to use paper baskets for baking. Fill each basket with 2/3 dough, insert almond nuts in the center of the cupcake. Paper forms with dough must be placed in metal forms, otherwise the muffins will blur when baking.
Heat the oven to 170 degrees Celsius. We bake muffins with coconut for 30 minutes on the middle shelf. Time may need a little less or more, depending on the characteristics of the oven. You need to get cupcakes when they rise and turn golden brown. Let them cool on a lattice.
