  • 500-600 g of pitted beef and fat;
  • 1 large carrot or 2 medium;
  • 2-3 medium sized onions;
  • 50-100 g of pitted prunes;
  • 2 tablespoons of tomato paste (or half a cup of tomato juice);
  • 2-3 glasses of water;
  • 1 tablespoon salt without top;
  • 10-15 pieces of black peppercorns;
  • 1-2 bay leaves;
  • refined sunflower oil for frying.

Method of cooking beef stew with prunes

Beef cut into cubes of approximately 2x2 cm, it is more convenient to do this, while the meat is not completely unfrozen.

Vegetables clean, wash. Onions we will cut small or quarter-rings, we will rub carrots on a large grater.

Warming up the sunflower oil in a frying pan with high sides, pour the onion into it and pass, stirring, over medium heat until soft.

Then we add a grated carrot to the onions and continue, stirring occasionally, to sauté together.

After 3-4 minutes, add meat to the carrot-onion company. Fry a little, stirring, until the color changes.

Pour 2-2,5 cups of water into the pan so that the meat is covered, cover with a lid and leave to simmer over medium heat for about 30-35 minutes. Gravy should slowly boil.

When the meat is soft, it's time to add prunes! Both dried and smoked will do, but I prefer the first option: it is softer, and the aroma is more pleasant. Rinse the dried fruit under the tap, pour in a pan with a dozen prunes and mix. Mix the tomato paste in half a glass of water and pour it into the pan. Instead of pasta, you can use tomato juice or grated fresh tomatoes - then there is no need to dilute with water.
