Potato dumplings with meat - a traditional dish of Belarusian cuisine. Probably, all our grandparents prepared and loved this simple rural dish, the recipe was handed down from generation to generation, each family had its own culinary secret and its own traditions. I share with you our family branded recipe of dumplings, which was prepared by my grandmother. Dish, I tell you honestly, hearty, I will not advise every day - the figure will suffer. However, compared to fried potatoes with meatballs, the calories are still less.
The most difficult thing in the recipe of dumplings is to “kick” potatoes, although modern kitchen gadgets make this difficult task easier. I, in the old-fashioned way, rub potatoes on a small grater, or use “rough male power”, which then with appetite absorbs the finished dish.
The classic Belarusian recipe of dumplings, of course, with pork. Choose not very fatty meat, and even better, take homemade minced meat, which consists of half of pork, half of beef.

- 450 g of minced pork;
- 100 g onions;
- 1 kg of raw potatoes;
- 1 egg;
- 50 g wheat flour;

Method of cooking potato dumplings with meat
We start with minced meat. It must be thoroughly kneaded so that the dumplings keep their shape and do not fall apart during cooking. So, put the mince in a bowl, add the finely chopped onion, salt and pepper to taste. Thoroughly knead the stuffing, like dough, and put it in the fridge so that it will lie down and cool.
Peel the potatoes, put them in a bowl with cold water, so as not to darken.
On a small vegetable grater three potatoes. Grated potatoes darken in front of your eyes, but don't let that frighten you, anyway, the resulting liquid will need to be squeezed out.
By the way, I somehow met the most cruel device for potato grater in the village. A piece of iron was often punched by large nails, it turned out the wrong holes with torn edges. But the pancakes with which we were treated were the most delicious in the world.
Put the grated potatoes in a sieve, covered with gauze. Then we twist the gauze and thoroughly squeeze the grated potatoes in order to squeeze moisture from the garbage as much as possible.
Put the pressed mass into a bowl, pour salt to taste, break a chicken egg.
Next, add wheat flour and mix everything thoroughly. It turns out quite thick dough, from which just sculpt dumplings.
Now we take 3 tablespoons of dough and 2 tablespoons of minced meat. We make an oval cutlet of minced meat, a round cake of potato dough. Putlet in the middle of the tortilla.
Spread over the patty with dough, make large oblong dumplings.
Heat 3 liters of water to a boil, salt, add a bunch of fresh herbs, spices. Shumovkoy spread dumplings in boiling water. Cook for about 20 minutes on low heat.
Sour cream salt, add finely chopped dill. Pour a few tablespoons of sour cream into a plate, put the dumplings, sprinkle with herbs and serve to the table.
