Olivier salad with fresh cucumber and sausage, cooked according to this recipe, is somewhat different from the traditional version. I, like any housewife who is experimenting in the kitchen, tried to bring some of her own in this classic dish. In my opinion, and in the opinion of the guests who ate the salad, it turned out very tasty and fresh. Instead of canned peas, she took frozen green peas - it is brighter, and properly cooked, it also tastes better. Usually vegetables for Olivier are boiled in uniform. From this tradition, I also decided to retreat and browned carrots in a mixture of butter and vegetable oil with red pepper. The remaining ingredients are unchanged, so that it is tasty, they must be fresh and of high quality.

- 500 g of boiled sausage;
- 300 g of boiled potatoes;
- 300 g raw carrots;
- 200 g of frozen green peas;
- 150 g onions;
- 6 hard boiled eggs;
- 150 g fresh cucumbers;
- 150 g pickled cucumbers;
- 60 g apples;
- 200 g of mayonnaise;
- 20 ml of vegetable oil;
- 20 g butter;
- salt, red pepper, herbs for serving.

We start with semi-finished products. Put the peas in a saucepan with boiling water, add salt, blanch for 5-6 minutes, lay down on a sieve.
Raw carrots cut into strips. Heat vegetable and butter in a pan. Fry the carrot over moderate heat until soft for about 8 minutes, sprinkle with a pinch of salt and red pepper. Then mix carrots and peas, cool to room temperature.

Green cucumbers cut into strips, sprinkle with salt, put in a colander, leave for 10 minutes to let the moisture out.

Cook eggs hard-boiled, chop finely, one egg is usually put on one portion of the salad, this is a classic calculation of ingredients.

We cut boiled sausage into cubes. All products for salads should be cut about the same, so tastier.

A touch of sourness and piquancy will add some salted pickled cucumbers, cut them into small cubes.

Next, chop the boiled potatoes. By the way, there is a simple way to quickly peel the potatoes. Drain the water from the ready potato, transfer it to the bowl with ice water for 1-2 minutes. After the contrast bath, the skin is removed easily.

Onions cut finely, sprinkle with a pinch of salt, pass to a transparent state in the same pan, in which the carrots were prepared.

We mix all the products in a salad bowl, and, as stated in the favorite movie “Office Romance”, add a grated apple. Apple should be peeled and immediately, until it is dark, rub on a large grater.
Season with mayonnaise, try, salt to taste and everything is ready!

Before serving, Olivier is decorated with fresh greens.

Olivier's salad must be brewed a little, but not more than an hour, since there is a fresh cucumber and an apple in it.
