Pike has long occupied an honorable place in Russian cuisine, the heroine of Russian fairy tales and sayings, she always attracted the attention of many housewives. Today, the hostess has a theme - how to cook pike in the oven.
Some believe that this fish becomes dry when fried or baked. You can, for example, bake pike in foil or parchment, but today we will experience an old recipe, bake fish in cabbage. Cabbage will give the dish juiciness and aroma, so let's cook pike in the oven.
Pike - 1, 5 - 2 kg;
Cabbage - head of cabbage weighing about 2 kg;
Onions - 2 pcs .;
Vegetable oil - 1 cup;
Greens - 1 bundle;
Flour - 3 tbsp. spoons;
Butter - 50 g;
Crackers, better rye - 0, 5 cups.
Salt and pepper to taste.
We cut the cabbage into straws, pour it into a saucepan or other dishes with thick walls of half a cup of vegetable oil, lay out the cabbage there. Add chopped onion, herbs, salt, pepper and stew under the lid closed for 40 minutes.
While the cabbage is stewing, we begin to carve our beautiful pike. The point is not very fast, because the fish of this size will be about three years old and the scales will not be removed very easily. You can pour it with boiling water, you can use a fish scaler. I adapt my large scales to clean with my hands, of course, if you have a good manicure, then this method immediately disappears.
We cut the fish cleared of scales and viscera into such beautiful pieces, 3 cm thick. Salt them to taste and let them soak for half an hour so that our fish will be salted.
Next, these beautiful pieces are rolled in flour and sent to fry in a hot frying pan on which the remaining vegetable oil is heated. Fry over high heat to get such a ruddy crust. What a smell, I'll tell you !!! But wait, that's not all.
We divide our stewed cabbage into two parts, one is laid out in a baking dish, it is not necessary to lubricate the form, because the cabbage absorbed enough oil during the stewing.
Now we put the fried pieces of pike on the cabbage from the top, like this.
And the last layer of the remaining cabbage, lay all the intervals, so that the fish was completely covered with cabbage. We still have one more onion, cut it with beautiful rings, sprinkle with croutons on top and lay down a few pieces of butter. Now it remains to send all this to the oven preheated to 180 degrees for 20-25 minutes. The dish is ready.
