
Verguns (lush brushwood), a dish of Ukrainian cuisine, is somewhat similar to pancakes. Lush dough on kefir, the minimum of available products - and a mountain of delicious pastries on your table.
Baking, though not expensive, but it comes out very gentle and soft. The Russian version of such baking contains alcohol (vodka or rum) in order for the baking to be as crisp as possible. Both that and that version of brushwood is good.

Ingredients for making brushwood on kefir:
- Flour - 3-4 tbsp.
- Kefir - 300-400 ml.
- Eggs - 1 pc.
- Salt - pinch
- Sugar - 3 tbsp. l
- Baking Powder - 1 tsp.
- Vegetable oil - 70-100 ml
- Powdered sugar - for sprinkling.

And kefir, and eggs should be at room temperature, because we get them out of the refrigerator in advance. Sift flour 2-3 times with baking powder, add salt and sugar, drive in an egg. Mix the ingredients.

Kefir is slightly heated, poured into the dough. Immediately do not add all the kefir, look at the dough. You may need more or less liquid, it all depends on the quality of flour. Kefir choose fat content of 3.2%. If it was not at hand, take sour milk. It turns out too tasty.

Knead not thick slightly sticky dough. Grease your hands with vegetable oil for convenience. Cover with a deep bowl and let stand 15-30 minutes.

Sprinkle the chopping board and rolling pin with flour and roll out the dough to a thickness of half a centimeter or more. So ready brushwood will be magnificent. If you roll thinner - the dough will come out dry.

Cut the dough into rectangles, and make a cut with a sharp knife along the center of the rectangle. Through this hole, turn out the half of the brushwood, so that the flagella are obtained from both sides. Do this with all the blanks.

Heat vegetable oil in a deep frying pan. We spread the brushwood at a distance from each other. Fry from two sides to brownish-golden color.

Spread brushwood on a paper towel so that it absorbs residual fat.

After complete cooling, sprinkle baking with powdered sugar. Serve with warm milk and honey or hot cocoa and raspberry jam.
