Why cook nettles when there is so much “cultural” green? And then, that the "thorny-thorn" in nutritional value is ahead of many of these garden crops.
Nettle with low calorie content contains the entire set of substances needed by the body: proteins, carbohydrates and fats. It contains such valuable substances as phytoncides and fiber, as well as flavonoids - compounds that are produced only by plants and are vital for the normal functioning of the body. Flavonoids act as antioxidants, are responsible for the strength and elasticity of blood vessels, and possibly help to stay young longer.
In addition, nettle is rich in micro and macro elements, various vitamins. The content of ascorbic acid in it is higher than in lemon - so eat nettle, and your immunity will be at its best. Vitamin A gives vigilance. A friendly group of vitamins B normalizes metabolism. But with vitamin K you should be careful - it has the property to increase blood clotting.
In total, there are several dozen species of nettle, but only the most common ones are suitable for food: nettle and stinging nettle. The first one is distinguished by higher growth - up to 1-1,5 m, the second one is lower, up to 60 cm, but it stings more, for which it received its name. But do not be afraid of insidious villi - cloth gloves will protect against them in the process of collecting, and in order to nettle does not sting hands during cooking, you must pour greens with boiling water. Well, if you, not knowing that nettle is not a harmful weed, but a tasty plant, have you already done it all, or do you not have a vegetable garden? Then we go to the forest or to the river bank. Nettle loves wet, shady places, so it thrives in the wet undergrowth, in the ravines, along the banks of rivers and streams.
Making sure that everything around is clean, we put on garden gloves so as not to burn our hands on the prickly emerald beauty, and tear off the greens. Just do not pull out the entire plant with the root: for use in culinary purposes, only the tops of nettle - sockets from the first 4 leaves are suitable. Nettle tops can be collected from the beginning of spring and all summer.
If you notice dandelions nearby - great, you can add young leaves of these solar plants to our pancakes. Both fragrant dill and fresh parsley will perfectly fit into the company. If you make a snack bar, an unsweetened version of pancakes, you can also put green onion feathers, take less sugar and a little more salt. In sweet pancakes, which you plan to eat not with the first dish instead of bread, but with tea, jam and honey, put more sugar, less salt, and do not add onions - only nettles, dill and parsley.
Ingredients for the nettle pancakes
- 3 eggs;
- 0, 5 l kefir;
- 1 tsp. baking soda;
- 1-2 tbsp. l Sahara;
- 1 / 4- 1/3 tsp. salts;
- Approximately 1, 5 cups of flour;
- Nettle bunch (100-150 g);
- A bunch of young greens (parsley, dill);
- Sunflower oil.
Making pancakes with young nettles
First prepare the greens. Dip it in a bowl of cold water so that the dust and particles of the earth from the leaves are soaked and lowered to the bottom. After 5-7 minutes, gently remove the herbs from the bowl and rinse in a colander with running water. Nettle can be scalded with boiling water so as not to “bite”. And if you have enough courage, you can cut it in such a way - it is even useful in small doses when nettle stings (of course, if there is no allergy). Then put the greens on a towel or napkin to dry a little, and proceed to the preparation of the dough.
Stir eggs with sugar: you can beat with a mixer, and if you want to quickly - shake with a whisk or even just a spoon: fritters are not as capricious in this regard as a biscuit.
Pour kefir into the beaten eggs. Pour a teaspoon without the top of soda and mix thoroughly. Vinegar do not need to quench: soda reacts with fermented milk product, and the pancakes turn out to be lush - see how many bubbles appear in the dough?
Now add 1 cup of flour to the dough - better sifted to make the dough more airy.
Finely chop the greens.
Stir, sift into the dough a little more (about 1/4 cup) of flour and add chopped greens.
Again, mix the dough until smooth. If it is watery, you can add more flour to the desired consistency. Heat the sunflower oil well and pour dough into the hot dough in a frying pan, forming round pancakes.
Fry over medium heat until bubbles appear on the dough from above and golden brown from below. Then turn the shovel. When the pancakes are fried and from the second side, remove them on a paper napkin so that the oil is absorbed.
