Meatballs in the oven with gravy of vegetables - dietary hot dish of minced chicken. Usually sauce for cutlets is prepared on the basis of broth, which is thickened with flour or starch. In this recipe, the gravy is prepared without flour, only vegetables.
Baked in the oven small meat balls in a thick and fragrant sauce can be served with mashed potatoes, rice or buckwheat - you get a full hearty lunch.
I cooked chicken meatballs, but you can make meatballs from any minced meat - pork, beef, or mix several types of meat using this recipe.

Ingredients for making meatballs with vegetable dressing
For meatballs:
- 800 g chicken fillet;
- 100 g onions;
- 50 g green onions;
- 100 g loaf;
- 60 ml of milk;
- salt, pepper.
For gravy:
- 300 g zucchini;
- 80 g onions;
- 80 g carrots;
- 100 g of bell pepper;
- 200 g tomatoes;
- 30 ml of sunflower oil;
- salt, granulated sugar, paprika.
A way of cooking meatballs with a gravy of vegetables in the oven
Starting with minced meatballs
Put in a food processor chopped small chicken fillet, add onions and green onions. The onion onions will give the mincemeat a light green tint and the color intensity will disappear during cooking. Then add a loaf without a crust soaked in milk, pour salt and freshly ground black pepper to taste. Grind ingredients to a homogeneous composition and remove the bowl with minced meat in the fridge for 15 minutes.
Lubricate the pan and hands with frying oil. We make small round meatballs the size of a ping-pong ball. We spread on a baking sheet with a small distance between them. If you sculpt meat balls with wet hands, water, falling on a baking sheet, will splash, hiss, and the butter will cover the patties with a thin layer and you will get a golden crust.
Put the pan in the meatballs in a heated up to 200 degrees oven, cook about 12 minutes. If you cook in a gas oven, then the meatballs need to be flipped once.
Now we make gravy for meatballs
Zucchini clean from the rind and seeds, cut into cubes. Chop small or three on a grater carrot. Tomatoes and sweet Bulgarian pepper cut into large slices. A small onion head cut into half rings. We put zucchini, carrots, sweet peppers, tomatoes and onions in a deep stew pan.
Pour sunflower oil into a saucepan, pour sugar and salt to taste. Add ground sweet paprika.
Close the saucepan with the lid, stew for 30 minutes, until the vegetables are completely soft.
Crush stewed vegetables with an immersion blender until smooth, taste like salt and sugar.
Pour the sauce on the pan with meatballs, again put the pan in the hot oven for 10 minutes.
Serve the meatballs to the table hot, sprinkle with fresh greens before serving.
By the way, advice to those who prepare for the entire working week, that is, for the future. Spread the cooked dish in small portions or sudochki and send them to the freezer. It remains only to warm up in the microwave oven a delicious dinner after a tiring work day.
