Clafuti (fr. Clafoutis) is a classic French summer dessert, which is very similar, in my opinion, to a sweet omelette. You can cook clafouts with strawberries, garden strawberries or wild berries, the main thing is that they are sweet, ripe and there are a lot of them! The principle of cooking is quite simple - pour a layer of berries with a sweet omelet and bake in the oven until golden brown.
Klafuti can also be cooked in field conditions without an oven. In this case, you will need a frying pan with a thick bottom and a non-stick coating, which is tightly closed with a lid, you need to cook over low heat.
Dessert be sure to pour a strawberry sauce, garnish with fresh mint, add whipped cream or fat sour cream.
In the summer, when it is hot and oven-consuming pies have no strength, you can always please your family and friends with this simple dessert, which, by the way, when it cools, becomes even tastier!

Ingredients for making claifouti with strawberries:
- 400 g ripe strawberries
- 200 ml heavy cream or milk
- 40 g of wheat flour in \ s
- 15 g of corn starch (you can take the potato)
- 4 g baking soda (or baking powder)
- 100 g sugar
- 120 g of softened butter
- 2 eggs
- 1 teaspoon ground cinnamon
A way to cook clafouti with strawberries.
In a deep bowl, grind fine sugar and soft butter into a pomp. Separate the yolks from proteins. To the mixture of sugar and butter add the yolks one at a time and again thoroughly ground until homogeneous.
Combine corn starch and wheat flour. Add baking soda, you can replace it with baking powder for the dough. Dry ingredients are mixed with whipped butter, sugar and yolks.
Add cream. If you want to make a less-calorie version of clafouti, then replace the cream with low-fat milk.
Blend two proteins into a state of soft peaks. Then gently interfere with whipped proteins in the dough, trying to keep the airy protein foam. Air bubbles, which are contained in whipped proteins, will make the dough airy and tender. The finished dough for klafuty should be the same as for thin pancakes, that is, rather liquid.
Grease the baking dish with butter, lightly sprinkle it with wheat flour. For klafuti any ripe strawberry is suitable, it is not necessary to cook this dessert from selected berries. We clean the berries from the stalks, wash, dry and put in the form. We fill the bottom of the form completely, leaving no empty seats. Lightly sprinkle strawberries with wheat flour so that the juice, which is released during baking, does not spread in different directions.
Pour the finished dough on strawberries. Slightly shake the form so that it fills the voids between the berries.
Sprinkle clafouti with ground cinnamon. To distribute the cinnamon on the surface of the dough evenly, use a fine sieve.
We bake klafuti in an oven heated to 165 degrees on the middle shelf for about 30 minutes.
This dessert can be eaten hot, but I advise you to cool it and serve with whipped cream or strawberry sauce.
