You can cook a Kurd with any fruit, the lime I added to this recipe gives the Kurd a somewhat unusual, but very appetizing flavor.

- 110 g of sugar;
- 30 grams of corn starch;
- 2 eggs;

Remove a thin layer of zest from orange and lime. Be sure to wash oranges and lime thoroughly before removing the zest, as the fruit is treated with pesticides. It is advisable to wash them with hot water, with detergents and a brush. Peel orange and lime, cut into small pieces. Tangerines clean, disassemble into slices, add to the sliced fruit, put the grated zest there. Pour about 30 ml of hot water into the pan, stew the fruit for 10 minutes on low heat, close the pan with the lid.
Lightly cooled fruits are ground with a blender to a state of smooth mashed potatoes.
We filter the fruit puree through a fine sieve, since the consistency of a regular Kurd must be creamy and homogeneous, without solid inclusions.
Add two raw egg yolks and sugar to fruit puree. Mix the ingredients with a whisk.
We mix the potato or cornstarch in a small amount of cold water, pour the mixture into the other ingredients. Put the dishes on a small fire, take a whisk and, stirring constantly, bring the mixture to about 90 degrees Celsius. It should not boil, as the yolks are cooked. Cooking, stirring, 10 minutes until thick.
Remove the ready-made Kurd from the stove, add high-quality high-fat butter to it, in this case the fatter the tastier. Mix the Kurd with a whisk so that the oil evenly combines with all the ingredients.
