Quite a simple cheese pie with kefir with a large set of ingredients, but don't let that frighten you. Cheese pie from the category of those in which you can put all the leftovers from the refrigerator and clean the jars of cereals in the kitchen cupboard. Collect pieces of cheese of different varieties, the remnants of vegetables - carrots, celery, sweet peppers. Sour milk, if milk is sour, is also useful, you can add it to the dough instead of kefir, and add wheat oatmeal, semolina or corn flour to wheat flour, because so often there are only 1-2 spoons in the kitchen cabinets anything from cereals. To make the pie with cheese a success, be sure to use a detachable form and oiled parchment, since melted cheese always strives to stick to the form.

Ingredients for kefir cheese cake:
- 200 ml of yogurt or kefir;
- 2 eggs;
- 50 ml of olive oil;
- 200 g wheat flour;
- 70 g semolina;
- 40 g of oatmeal;
- 2 tsp. baking powder;
- 100 g mozzarella;
- 100 g of hard cheese;
- 70 grams of celery;
- 50 g pitted olives;
- 1 tbsp. l pumpkin seeds;
- 1 tbsp. l sunflower seeds;
- 2 tsp. white sesame;
- thyme, paprika, salt.
A way to make cheese pie on kefir.
Making the dough without yeast. For the test, you can use kefir, homemade yogurt from sour milk or sour cream with a low fat content. Mix yogurt with salt and raw chicken eggs.
Add olive or any vegetable oil, mix liquid ingredients until smooth.
Separately mix semolina, wheat flour, oatmeal and baking powder. You can improvise and replace the corn semolina or add a mixture of four cereals instead of oatmeal to get a special taste.
Add dried aromatic herbs and spices - thyme, ground paprika to dry ingredients. You can also add oregano or Provencal spice mix.
Put the liquid and dry ingredients together, knead the dough so that there are no lumps of flour left in it, add mozzarella cheese cut into small cubes and pitted olives.
Fry or blanch a few celery stalks, cut into small cubes, add shredded hard cheese and celery to the dough.
For spice and piquancy we put the chopped finely pod of chili pepper. Carefully mix all the ingredients and turn on the oven to heat up to 200 degrees Celsius.
Put the parchment in the baking pan, grease it with olive oil, spread the dough, smooth it.
Liberally sprinkle dough with pumpkin seeds, sesame and sunflower seeds.
We put the form in a hot oven on an average level, cook about 40 minutes. The time depends on the characteristics of the plate and the size of the form. I specify the time for a form measuring 11 x 22 centimeters.
Cool the ready-made cheese cake, remove it from the mold, remove the parchment. To keep the pie crust slightly crisp, cool it on a wire rack or on bamboo sticks.
