Vegetable stew with beans (canned beans stewed with vegetables) - a delicious hot dish of vegetables, which I recommend to include in the fasting menu, so that it is not boring. Monastic chefs advise you not to radically change your diet during fasting, but simply to exclude animal products from it. Prepare borscht without meat, lasagna with mushrooms, vegetarian cake, but do not forget that, having refused meat products, you are depriving your body of protein. There is always a way out of this situation: find protein in plants. Peas, chickpeas and lentils contain about 20% of vegetable protein, therefore, canned beans stew with vegetables will successfully replace potatoes with meat in your dinner.
Another important detail is the cooking speed, in the case of legumes this is very important. Dry peas, lentils, chickpeas or beans require pre-soaking and long-term heat treatment. Ingredients for vegetable stew with beans
- 1 can (350 g) of white canned beans;
- 150 ml of vegetable broth;
- 120 g onions;
- 150 g stem celery;
- 150 g carrots;
- 150 g zucchini;
- 100 g tomatoes;
- 20 g green onions;
- 1 pod of red chili;
- vegetable oil, salt.
Method of cooking vegetable stew with beans
Heat refined vegetable oil or unscented olive oil in a pan. Add into it finely chopped onions, about a teaspoon of fine salt and a few tablespoons of vegetable broth. Fry onions until all the liquid has evaporated. If you do not have vegetable broth, ordinary water will do.
Celery stalks are cut across into cubes the size of about a centimeter, also we cut the peeled carrots. Add the vegetables to the onions, pour the remaining broth or water, cook, until the liquid is completely evaporated.
Zucchini and tomatoes are cooked quickly, so add them at the last moment. So, cut the zucchini into small cubes, put the tomatoes in boiling water, remove the skin, knead the pulp with a fork or cut it finely.
Cooking everything together for about 10 minutes.
We throw the beans on a sieve, then rinse with cold water, so we remove the excess salt and other preservatives. Add the washed beans to the pan.
Stew all together for another 5-7 minutes, salt to taste, then sprinkle the dish with finely chopped green onions.
If spicy food with a peppercorn is to your taste, then we cut a pod of red chili peppers into thin rings and sprinkle them on the prepared dish before serving.
