Delicious homemade cabbage rolls - a great option for the second. With their preparation, you need to tinker a bit, but you get a nourishing independent three-in-one dish: both vegetables, and a side dish of cereals, and meat. Although it is possible and without meat, if you observe the post. Vegetable vegetarian cabbage rolls, without minced meat and sour cream, are not inferior to the classic taste. Do you doubt? Ingredients for lean cabbage rolls with vegetables

- 1 onion;
- Salt, pepper, bay leaf;
- Sunflower oil;
- Tomato paste - 2 tbsp. l or juice 0, 5-1 tbsp .;
- Greens.

Cooking lean cabbage with vegetables
Stuffing for stuffed cabbage
Make stuffing for vegetable cabbage. We will fill the rice with water in a ratio of 1: 2 (for 1 item of cereals - 2 items of water) and boil until almost ready. If the rice is a little damp, nothing, it will come in cabbage rolls.
Peel the onions and carrots, wash them. Finely chop the onion and fry in sunflower oil for 2-3 minutes. Then add the grated carrot and continue to sauté with onions. When the vegetables are soft and zazharka - orange-golden, turn off.
Combine the boiled rice with half of the carrot and onion zazharki, salt, pepper and mix. The filling is ready.



Cabbage leaves for cabbage
Now prepare the cabbage leaves. You can soften them in two ways. The first, classic - boil whole head. Rinse the cabbage, remove a pair of top sheets from it. Then we make cuts on the sides of the stalk, so that the leaves can be easily removed from the head. Put the whole cabbage in a saucepan, pick up water, add salt and set on fire. Boil cabbage to boil, and then another 3-5 minutes. Do not digest - then the leaves will become too tender and will tear.

Then we catch (be careful - the cabbage is hot and heavy), dabble with cold water and put on a plate to cool. After a few minutes, carefully remove the softened upper leaves - now they easily move away from the head of cabbage. After reaching the layers, where the leaves remained crisp, again drop the head of cabbage into a saucepan with boiling water and boil a little more.
The second way, modern - in the microwave. Since not many people like to mess around with a whole head of cabbage in boiling water, the housewives came up with another option for preparing cabbage for cabbage rolls. The whole head of cabbage is placed in a microwave and is cooked for 6-10 minutes at the highest power. Then pour the cabbage with cold water (optional), disassemble the head of the cabbage on the leaves and stew them in the microwave for another 5 minutes.
The leaves are also becoming soft, but one can argue about the benefits of this method - discussions about the effect of microwaves on products do not subside to this day. I personally prefer to boil the cabbage.

For softened leaves, cut hard veins, some cooks beat off the hard part of the leaf with a hammer for chops.
Making cabbage rolls
You can make cabbage rolls! Put the cabbage leaf on a plate or plate, in the middle of the sheet - stuffing, and bend the bottom edge of the sheet up. Then we bent the right and left edges of the cabbage leaf to the middle.

And finally, turn down the remaining edge to make an envelope. Tightly stuffed cabbage rolls in layers in a pan, at the bottom of which there is some water poured. It is enough if the water covers the first layer of cabbage and you can put two and three layers. Stuffed cabbage will be cooked as a pair, and will be tender, soft.

Stew stuffed cabbage under the lid on medium heat until the cabbage is soft. In the meantime, they slowly boil, prepare a delicious gravy. Remember, we have half a carrot with onions? Add the tomato paste, slightly diluted with water (or tomato juice, or grated tomatoes), season with salt and stew for another couple of minutes. Also in the gravy, you can put the remaining stuffing, if it turned out a lot.

On the almost finished stuffed cabbage we spread the gravy, add the bay leaf and finely chopped greens for the aroma: parsley, dill (suitable fresh or frozen). After 2-3 minutes, delicious lean cabbage rolls with vegetables are ready.

Serve, generously watering on top of tomato sauce and decorate with fresh greens.
