The name of this simple and inexpensive dish comes from the French verb “to extinguish” - fricasser , and the word “fricassee” itself (taking into account the recipe) can be translated from French as “sundry stuff”. The dish can be cooked in less than half an hour, just be sure to take two pans to significantly speed up the process. “All kinds of things” that are used to make fricassee are various vegetables — peas, green beans, celery, carrots, turnips. The meat component of the dish is also diverse - chicken, lamb, veal and pork, in a word, any meat to your taste.
Meat and vegetables are fried sequentially and then cooked in a thick white sauce based on cream or sour cream. Provence flavored herbs, delicious olive and butter will be useful in this recipe.

Ingredients for Chicken Fricassee with Peas
- 400 g chicken fillet (breast);
- 100 g onions;
- 120 g carrots;
- 80 g stem celery;
- 400 g of frozen green peas;
- 200 ml of cream;
- 40 g butter;
- 15 g wheat flour;
- rosemary, thyme;
- 30 ml of olive oil;
Method of cooking chicken fricassee with peas
We start with meat. Chicken breast cut from the bone. For a quick recipe, you need to cook meat without stones, but in the classic fricassee recipes, the meat should be on the bone.
To chicken roasted quickly, cut fillets in the Chinese style - thin narrow strips. Important: cut the meat across the fibers!
Heat in a skirt in a tablespoon of olive and butter, throw in chopped chicken, fry quickly on high heat, sprinkle with olive oil with thyme and rosemary. Fry chicken need 5-6 minutes, no more.
At the same time, heat the remaining olive and butter in another pan, throw in finely chopped onions.
To the onions, add a carrot sliced with the thinnest straws (so that it is prepared quickly).
Then add celery and fry vegetables over medium heat, stir constantly, so as not to burn.
Cooking vegetable mixture for fricassee with peas 9-10 minutes, during which time the carrots will be soft.
Now we shift fried chicken to vegetables.
Mix cream and wheat flour in a bowl with a whisk so that no lumps of flour remain. Pour the mixture into the pan with chicken and vegetables.
Cook on low heat for 5 minutes, stir, as the sauce can burn.
Put frozen green peas in a frying pan, close the lid tightly and simmer on low heat for 7-10 minutes. It’s not necessary to cook for long, so that the peas stay green.
We add salted stew and pepper to taste, mix, remove from heat.
