Today I want to offer you to try an unusual dish. Very simple in execution, but worthy of a restaurant. Minimalistic in ingredients - and rich in taste. Whether the first, or dessert ... Are you intrigued?
The recipe for apple soup, mysterious and tempting, interested me for a long time, but somehow it was scary to cook such a strange dish. Apples somehow accustomed to put in compote, but not in the soup! What if the taste of the original soup is as specific as a cucumber lemonade? But still, I plucked up courage, tried to cook half a portion. And ... the next day the recipe was repeated! Because apple soup turned out to be delicious, and very much so!
Imagine a warm apple sauce with a silky creamy taste and light aroma of cinnamon, gently enveloping and imperceptibly melting in your mouth! This is what apple soup is like - although it is more correct to attribute it not to the first courses, but desserts, just like strawberry soup, which we prepared in the summer. And in the fall, in the season of apples, I recommend you to try this interesting dish.

Ingredients for Apple Dessert Soup with Apple Chips
- 2 medium apples;
- 30 g butter;
- 1 tablespoon of sugar;
- pinch of salt;
- a pinch of cinnamon;
- 100 ml of milk;
- 100 ml of cream 10%;
- 1 tablespoon of lemon juice.
Apples of green or white sweet-sour varieties are best suited: Antonovka, Simirenko, Golden, Granny Smith, and I cooked with Snow Calvin.
Method of cooking apple soup-dessert with apple chips
We'll wash the apple, cut it in half or in quarters, clean it from hearts with seeds and partitions, as well as peel - if you cook apples peeled from the skin, the soup is more tender. Cut apples into small pieces (1, 5-2 cm) of arbitrary shape.
For cooking, you need thick-walled dishes, such as a cast iron pot or a small diameter stewpan. Put a piece of butter in it and heat it on the stove before melting.
We pour sugar into the melted butter and continue to heat it over low heat, stirring all the time with a spoon. As soon as the mixture begins to boil and is going to caramelize - bubbles appear, add the apples.
We continue to cook, stirring for 4-5 minutes.
In the meantime, fruit pieces are languishing in a cauldron, you can fry a couple of apple slices for decoration in parallel. “Wow, first apple soup, now also fried apples!” You say. But try to fry a thin, glowing slice on butter on both sides in butter!
It turns out a delicate delicacy, a bit like sweet chips and baked apples at the same time.
When the apples are softer, like stewed, add lemon juice, mix.
Combine cream and milk.
Add to the apples, mix. Continue to heat, and when the soup starts to boil, immediately turn off.
Flavor hot apples with cream using a blender, adding a bit of cinnamon. What a wonderful scent immediately shrouds you!
We quickly put dessert in a plate, decorate it with a slice of fried apple ...
And we serve immediately - apple soup is delicious in a warm, freshly prepared form! Therefore, you need to cook as many servings as there are willing :) And eat immediately after cooking!
