Cheesecake with strawberries without baking is a very tasty creamy dessert with fresh garden berries that I cook in summer. From time to time, a sweet cheesecake has to be cooked even in the heat - holidays happen at any time of the year, and you want to serve not only chocolate for a cup of coffee with your friends. For hot days, when the included oven turns a small kitchenette into the Sahara, the recipe for cheesecake without baking is amazing, because only a refrigerator is needed to make a dessert.
Philadelphia cream cheese is an ideal ingredient for cheesecake stuffing, however soft sweet curd, especially for children, replaces it with success.

Ingredients for a strawberry-free cheesecake without baking
For the basics:
- 350 g of shortbread;
- 150 g butter;
For the filling:
- 300 g of Philadelphia soft cheese;
- 100 g of cream 20%;
- 120 g of powdered sugar;
- 2 gelatin plates;
- 350 g fresh strawberries;
- 50 g of dark chocolate;
- 20 g butter.

Shortbread (in this recipe, “Chess”), grind in a blender to obtain a homogeneous mass, which should turn out like sand. If you cook in the country, without kitchen gadgets, then put the cookies in a plastic bag and roll out with a rolling pin, you get a fine crumb.
Cut butter into cubes, put in a saucepan. Put the saucepan on the stove and melt the butter over low heat.
Mix melted butter with sand crumb. We take a detachable baking dish with a high side. We spread the base in the form, we press it with a wooden stick for the potatoes, we make an even cake. Then remove the base in the refrigerator for 20 minutes.
Plates of gelatin are placed in a bowl of cold water for a few minutes.
Heat the cream in a skillet, add powdered sugar and vanillin, mix. Boil the cream is not necessary enough to heat well.
Pour the heated cream into a blender, add soft cream cheese “Philadelphia” and soaked gelatin plates. Mix the ingredients for a few minutes. The resulting mass should be slightly warm and liquid so that the gelatin is easily dissolved.
We get the base of the cheesecake with strawberries without baking from the refrigerator. Wash strawberries, dry on paper towels, add to the filling. Pour the strawberry filling onto the sand base, level it, put it in the fridge for 6-8 hours, or better all night.
Get the cheesecake out of the fridge. We heat the sides of the mold with a torch or wrap with a towel soaked in very hot water for a few seconds. When the edges of the filling are left behind, open a towel and remove it from the cheesecake.
To decorate the cheesecake, we melt bitter chocolate and butter in a water bath. Chocolate can not be heated strongly - it will roll, it will look unappetizing. Its melting point is 33-36 degrees, such heating is quite enough.
Pour cheesecake with strawberries without baking melted chocolate and you can immediately serve with a cup of aromatic coffee. Enjoy your meal!
Strawberries in this recipe can be replaced with any fresh berries - blueberries, raspberries or blueberries.
