Italian cuisine, of course, is one of the best and trendy cuisines in the world today. And this is not surprising! After all, it differs in such a variety of products: meat, seafood, vegetables, fruits, cheese, rice, the famous "pasta" and, of course, delicious desserts.

The culprit of the "celebration" of this article will be an unsurpassed Italian delicacy called Tiramisu - a multi-layered dessert, which traditionally includes: mascarpone cheese, sugar, eggs, espresso coffee, Marsala wine and savoyardi. However, the situation is such that some ingredients can not always be purchased on the shelves of our stores, so they can be replaced. But more on that later.

Tiramisu loves all of Italy! It is not without reason that three Italian words are the basis of its name: tirami su, which literally means “lift me up”. According to the first version, tiramisu was given this name due to its high caloric content. The majority are inclined to believe that the Italians have put their expressiveness inherent in it, and this translation should be interpreted as “lift my spirits, give me joy”.

It makes no sense to explain what tiramisu is, and even less to compare it with a delicate soufflé or cake. It should definitely try. But how to do it? After all, not everyone can afford to go to Italy to taste the delicious food.

Although in our time this delicacy is widely known all over the world, you can try real tiramisu only in Italy. Many restaurants will offer you a similar dessert, cut into portions, but this is not an authentic tiramisu, but its counterpart. The thing is that the mascarpone cheese is the basis of the delicate dessert. A rare variety, of course, can be obtained if desired, but you know that its freshness will be far from ideal. And for the preparation of this tiramisu requires fresh mascarpone. The next, no less important ingredient of tiramisu - savoyardi - is a biscuit made according to a unique old recipe made from flour, protein and sugar.

So, as we already understood, it is not so easy to cook classic tiramisu at home. If there is no opportunity to visit the homeland of dessert, let you be comforted by those cooking options for Italian sweets, which successful chefs happily share, as well as loving housewives who occasionally indulge the family with this gentle multi-layered creation.

In our country, as well as others, mascarpone cheese is replaced by brewers, necessarily fresh cottage cheese, cream, sour cream or such varieties of cheese like “Buko”, “Philadelphia”, “Marsala” - “Madera” wine, Amaretto liqueur, Brandy or high-quality cognac, and Savoyardi - sponge cakes. Recipe 1: Classic Tiramisu

Ingredients:

- 75 gr. Sahara

- three egg yolks

- three tsp of instant coffee

- 120 g sponge-shaped biscuit cookies

- one table. l cocoa powder

- four Art. brandy or amaretto spoons

Cooking Method:

1. Fill the coffee with a glass of boiling water. Cool, pour into deep dishes and add liqueur or brandy to the resulting drink.

2. Beat the yolks thoroughly with sugar (powdered) until it is completely dissolved. In the egg mass gradually introduce sour cream, cottage cheese or mascarpone, constantly stirring. Beat until a thick homogeneous mass.

3. Half of the biscuits dipped in the coffee mixture and quickly spread them close to each other. Liberally daub an egg-sour cream mixture (curd, cheese, etc.) on all sides. 4. Do the same with the second half of the biscuits, imposing on the first part of the dessert. Cover the tiramisu with the remaining egg-cream. The remains are leveled to the top.

Next, we cover the dessert with cling film and put it in the fridge for at least four to five hours. After that, sprinkle it with cocoa powder and serve it to the table.

Recipe 2: Tiramisu from Julia Vysotskaya

The principle of preparation of this recipe is similar to the previous one. However, instead of Amaretto, we will add brandy and in the process of cooking we will complement the cream cake with beaten egg whites, which we preliminarily maintain in the refrigerator.

Ingredients:

- creamy mascarpone 400 gr.

- 300 gr. ladies fingers cookies

- five chicken eggs

- half a cup of powdered sugar

- average cup of strong coffee

- a couple of tablespoons of brandy

- cocoa powder

Cooking Method:

1. Beat yolks with powdered sugar until a light yellow creamy mass is formed. Add mascarpone and mix everything thoroughly to avoid lumps.

2. Protein we get out of the refrigerator, beat in foam and supplement them with the yolk mass. All mix.

3. Brew strong coffee, cool slightly and add brandy to it. The resulting drink is soaked “ladies fingers”.

4. Next, lay out in the form of one layer of soaked “fingers”, pour them with cream, then again lay out a layer of biscuits and pour it again with cream. Remove the cake in the cold and insist at least four to five hours, after which we take out and sprinkle cocoa.

Recipe 3: Tiramisu with Pineapple

Tiramisu prepared according to this recipe turns out to be extremely tasty. An airy soufflé in combination with pineapples will give you a wonderful mood, truly “lift you up”. Be prepared for the fact that guests literally “overwhelm” you with compliments and will demand to open the secret of cooking a wonderful dessert. Isn't every woman dreaming of this?

Ingredients:

- 500 gr. Mascarpone

- four eggs (chicken)

- four Art. powdered sugar

- Savoyardi or “ladies fingers” - tinned canned pineapples

- a glass of Maraschino liqueur

- cocoa powder

Cooking Method:

1. Pour pineapple juice into a bowl (but do not pour it out, as we will need it later). Pineapples cut and squeeze the juice out of them, as best as possible.

2. Separate the yolks from proteins. Beat yolks with powder, and whites (separately) with a pinch of salt.

3. Cooking cream of cheese, whipped whites and yolks (traditionally). After that add the pressed pineapples to the creamy mass. All mix.

4. Mix pineapple juice with “Maraschino” and dip cookies into the drink. Next, lay it on a rectangular layer, fill with cream. Repeat the procedure again. We finish the layer with cream.

Remove the dessert in the cold for a few hours, then sprinkle cocoa and serve to the table, cut into portions. Enjoy your meal!

Tiramisu - useful tips from experienced chefs

Tiramisu is a 100% Italian delicacy that is traditionally made from mascarpone, savoyardi, “Marsala” and coffee.
