For the minced meat cutlet:
- 450 g poultry fillet (turkey, chicken);
- 100 g white bread;
- 50 ml of milk;
- 50 g leek;
- salt, vegetable oil for frying.

- 1 hard boiled egg;
- 35 g of mayonnaise;
- 5 g oregano;
- 3 cloves of garlic;
- 1 chili;
- 4 cherry tomatoes.

Fillet of poultry (chicken or turkey) or veal skip through a meat grinder. Choose a grill with large holes so that the pieces of meat in the meatballs are bigger, so the meatballs will be juicy.
White bread cut into cubes, pour cold milk, soak, turn into a homogeneous slurry. Mix bread with minced meat.
We cut a finely light part of the stem of a leek. Pour fine salt to taste.
We spread the ingredients on the board, chop with a wide, sharpened knife for a few minutes.
We divide the mass into 4 parts. We form large flat cakes about 2 centimeters thick.
In a frying pan with a non-stick coating, heat refined vegetable oil (odorless). Fry the patties on each side until golden brown. It is not necessary to bring to readiness, only so that a ruddy crust appears.
We do topping. Grind soft fatty cheese in a bowl, add chopped boiled egg. We clean the pod of hot pepper from the seeds, chop it finely. Garlic cloves pass through the press. Add mayonnaise, rub (mix) cheese, egg, garlic, chili and oregano until smooth.
We divide the topping into four parts, on each cutlet we form a big “cap” of the cheese mass. In the center we put a cherry tomato.
Fold a piece of food foil in several layers, lubricate with vegetable oil, put the chop, raise the edges of the foil to the top so that the juice does not leak during baking.
We heat the oven to a temperature of 220 degrees Celsius. We send a baking tray with meatballs in a hot oven for 7-8 minutes - until golden brown on toping.
With piping hot, we serve cutlets with topping and cherry tomatoes to the table. As a side dish I recommend mashed potatoes and fresh vegetable salad.
