Pork with vegetables in the oven - a hot dish for the second, which is suitable for dinner or lunch. There are combinations of products, just created to be together on a plate. For example, frozen green peas in itself pleases, perhaps, only vegetarians. But if next to it is a golden piece of roast pork belly and stewed carrots, and all this is soaked with juices from roasting and stewing, then the attitude to the peas immediately changes - it becomes the most delicious side dish.
This dish in various variations is popular in the Czech Republic and Germany, where they like to serve roast pork with a cold beer.
Pork, baked with vegetables - one of the most favorite dishes of home cooking, it may well be the “on-duty” recipe in your cookbook. Roast pork is a simple dish that guarantees a great dinner.
Of course, pork and potatoes like everyone without exception, because it is very tasty. But we all love variety, so in this recipe, instead of potatoes - peas and carrots.

Ingredients for pork with vegetables in the oven
- 450 g of lean pork belly;
- 250 g of frozen green peas;
- 120 g onion;
- 150 g carrots;
- ground red pepper, cumin, vegetable oil, salt, sugar, balsamic vinegar.
Method of cooking pork with vegetables in the oven
The meat is cut into portions, after cutting off excess fat and all the excess (films, tendons). I cooked boneless bacon, it takes less time to prepare it.
Next, gently repel pieces of meat, this can be done with a blunt edge of a wide knife.
Sprinkle meat with cumin, ground red pepper and salt. In addition to pepper and cumin, you can sprinkle meat with dried thyme, fennel or rosemary, seasoning mixture.
Lubricate the form with high sides of vegetable oil, lay out the pieces of pork in one layer.
Cut off a piece of parchment for baking, cover the form with parchment tightly, put a sheet of foil over the parchment.
We heat the oven to a temperature of 170 degrees Celsius. We put the form on an average level, prepare 35-40 minutes.
While the meat is stewing, we prepare the vegetables separately, because we have pork in the oven with vegetables.
In a frying pan, greased with vegetable oil, until tender, add finely chopped onions and carrots cut into thin straws, season with salt, sprinkle vegetables with a pinch of sugar, pour 3 tsp of balsamic vinegar.
In the pan to the ready stewed carrot, pour out the frozen peas, mix and cook everything together on medium heat for 5 minutes.
We take the form with meat from the oven, spread the steamed vegetables on top, mix and put the form back on the middle level of the cabinet oven. Heating increase to 190-200 degrees. Cooking all together for 15 minutes.
To the table pork with vegetables in the oven serve hot. As I have already said, a mug of cold beer in this case would be most welcome. Enjoy your meal!
The peas in this recipe can be replaced with green string beans, in time these vegetables are cooked the same way, and the taste in both cases is excellent.
