I do not like store sausage, so I am looking for sausage recipes in cuisines of different countries, I add something of my own to them, it usually turns out well. For example, the recipe for this boiled sausage from turkey with rosemary, parmesan and spicy chili, is inspired by Italian cuisine. The sausage was so fragrant, spicy and juicy that it was eaten the same day, with no residue.
Italians season with rosemary even compote, I have not tried, but in my opinion, meat and rosemary are a classic combination. If you have not spoiled your home with this taste, then it's time to start, because even a small sprig of rosemary is enough to give homemade sausage a fresh and pleasant taste and magical aroma.
It is very convenient to cook homemade sausage semi-finished products, you need to devote a little time to this, and then just freeze raw sausage packed in cling film and cook it as needed.

- 400 g turkey fillet;
- 40 g Parmesan;
- one chicken egg;
- 20 g of ground crackers or semolina;
- 50 g onions;
- 1 pod of red chili;
- 3 sprigs of rosemary;
- nutmeg, garlic, black pepper.
Method of cooking boiled turkey sausage with rosemary and cheese
Chop the turkey fillet into large pieces, add salt, ground black pepper, put in the fridge for 24 hours. Prepared meat for sausage can be marinated and longer, the time of marinating can be safely increased to 2 days.
For the preparation of this sausage, meat from any parts of the turkey is suitable, but it is best to mix in equal proportions breast fillet and meat from the hips.
Making sausage. Fry in the olive oil finely chopped onions and a few cloves of garlic chopped very finely, add to the turkey.
Finely cut the paprika pod, do not feel sorry for the pepper, this sausage should be spicy! We take a few long sprigs of fresh rosemary, remove green leaves from them, chop finely, add to the turkey along with red pepper.
Put the minced egg, ground crackers or semolina, add half a grated nutmeg.
On the layer of food film put cooked minced turkey. Parmesan cut into small cubes or break into small pieces, put the cheese in the middle of the future sausage.
We roll up the sausage, it should turn out to be about 5 centimeters thick, wrap in several layers of food film. Tie the ends of the sausage with a harsh thread, and tie the sausage itself crosswise.
We roll up the sausage horseshoe, you need to steam it up. You can use the slow cooker or put the sausage in a colander, put it in a large saucepan over boiling water, tightly cover with a lid.
Cooking boiled sausage from turkey for about 25 minutes, you can gently turn it over once.
Cool the cooked boiled sausage made from turkey with rosemary and cheese, leave it in the fridge for several hours, then you can remove the casing, the ropes and cut the sausage into thin slices. Enjoy your meal!
