First of all, prepare the stuffing. We wash both types of meat and a piece of fresh fat under running water, dry them and pass through a meat grinder. Add salt and pepper.
Bread cut or break into small pieces and pour warm milk. In cutlets, you can use not quite fresh, but not spoiled bread. Wait for the pieces to be well soaked in milk, wait 10-15 minutes.
We clean onions and potatoes, wash them and pass through a meat grinder together with bread. Pulling out of the milk, the bread pieces will be squeezed a little, so that the excess liquid is gone. Mix all the components of the stuffing together, beat off so that the stuffing was more tenacious.
We make cutlets. We roll up the balls in the palms and roll them in breadcrumbs, and then slightly add, giving the shape of an ellipse. On one cutlet take 2-2.5 tablespoons of minced meat.
Fold the resulting patties on a tray or cutting board covered with cling film. Sent to the freezer for 20-30 minutes, until the chops freeze.
