How can you cook fish to make it tasty, a lot and useful? Try a simple and appetizing dish - fish under the marinade, which is also called fish under a fur coat. “Fur coat” or marinade is made from vegetables and tomato, seasoned with spices - the result is a very tasty fish marinade and a lot of even more delicious gravy, which really goes well with any side dishes!
Ingredients for marinated fish
- 1-2 pcs. fresh frozen low-fat sea fish (hake, cod, pollock);
- 4-5 tablespoons of flour;
- 3-5 carrots;
- 2-3 medium bulbs;
- 2-3 tbsp. l tomato paste (can be replaced with fresh tomatoes or tomato juice);
- 1 glass of water;
- salt - approximately 0, 5 st. l .;
- black pepper peas - 10-15 pcs .;
- bay leaf 1-2 pieces .;
- sunflower oil.
Method of cooking fish under the marinade
Cut the fish into pieces 2-3 cm wide, salt and roll well on both sides in the flour. It is important that the fish completely defrost - otherwise, when heated, the flour will mix with water, and the pieces will stick to the pan. Roll down carefully so that the fish do not fall apart during frying: thanks to the flour on it forms a light golden crust.
Heat the sunflower oil in a frying pan, lay out the fish pieces and fry more than one medium on one side on the fire. We do not fry until ready, but lightly - until a light golden crust is formed. Invert the pieces with a fork or spatula and fry on the other side. Then we remove the fish on a plate and for the time being we set aside.
In the meantime, the fish is fried, peel the onions and carrots. Onions we will cut into half rings or small pieces, we will carrot we will rub on a large grater.
After removing the fish from the pan, add vegetable oil and spread onions. Stirring the onion until soft and add the grated carrot.
After mixing the carrot and onion, continue to sauté the vegetables until soft. Salt, pepper to taste and put vegetables on a plate.
Then you can choose one of two options: cook the fish under the marinade in a frying pan or in the oven. In the first case, it turns out faster, in the second - a little longer, but richer in taste and benefits, like all baked dishes.
If you chose an oven, we put the fish in a baking dish greased with vegetable oil, on top — vegetables, pour a glass of water with tomato paste diluted in it, salt, add pepper-peas, cover with a sheet of foil and bake at 180 ° C approximately 35-40 minutes. If you choose a frying pan, add a little oil, put the fish slices on the pan again, and put the vegetable “coat” on top of the fish in an even layer. The more “marinade”, the more delicious!
Pour into pan 0, 5-1 st. water, so that the fish is covered up to half, cover with a lid. Simmer on low heat, at low boil, about 20 minutes.
Then add tomato paste, slightly diluted with water, and spices: pepper-peas and bay leaf. Boil for another 2 minutes, and the delicious fish under the marinade is ready.
Such an appetizing fish under the carrot-onion-tomato “fur coat” can be served with any side dish, especially delicious with mashed potatoes, rice or pasta.
