Pumpkin soup, beans and pork ribs - a tasty, rich and thick first course that is best prepared in late autumn or winter, when the harvest is gathered, outside the window is cold and uncomfortable, I want to warm up and eat something satisfying. Ribs can take any - pork, calf, lamb, cooking time will be slightly different, but only slightly. Young beans are tender, they do not need to be soaked and cooked for a long time, it will be cooked at the same time as other vegetables.
If you had to cut a large pumpkin to make soup, then the question arises how to save the cut pumpkin? Cut off the peel with a sharp knife, remove the seeds, wrap the pulp in foil or food film. Packed in a similar way, the vegetable will be stored in the refrigerator compartment for 10 days. You can also cut the orange flesh into small cubes, put it into portion packets and freeze.

- 600 g pork ribs;
- 500 g pumpkin;
- 300 g potatoes;
- 150 g young beans;
- 80 g onions;
- 80 g carrots;
- 60 g tomato puree;
- celery, garlic, salt, cooking oil.
Method of cooking soup with pumpkin, beans and pork ribs
Pork ribs cut along the piece. Pour 2, 5 liters of cold water in a saucepan, put ribs, add a bunch of celery with roots, 2-3 garlic cloves, bay leaf, salt to taste. After boiling, remove the scum with a slotted spoon, cover the pan with a lid, cook on low heat for 45 minutes - 1 hour.
While the meat is boiling, prepare the vegetables. Clean the young bean pods, extract the beans. Instead of fresh beans, you can take a tin of canned or boil dry beans in advance.
With a carrot, remove a thin layer of peel with a knife for cleaning vegetables. Rub the carrot on a large grater.
Remove the husks from the onions, cut the onions finely.
In a pan, heat up a tablespoon of refined vegetable oil for frying, then pass finely chopped onion and grated carrot 6-7 minutes until soft.
We clean the peel of a pumpkin, with a tablespoon we remove the seed bag with seeds. Pulp cut into small slices.
Potatoes are also peeled, cut into cubes.
When the meat is ready, we get a bunch of celery from the pan - it has fulfilled its function and will no longer be needed.
Throw peeled beans, sliced potatoes, pumpkin slices, and browned onions with carrots into a saucepan. Add tomato puree or thick tomato sauce.
Bring to a boil, cook over moderate heat for 30 minutes.
At the end of cooking, salt to taste, season with freshly ground black pepper.
Remove the cooked soup from the stove, cover the pot with a towel, leave for 20 minutes to make the vegetables steam better.
To the table we serve soup with pumpkin, beans and pork ribs with sour cream and fresh greens, spread the ribs on a separate plate. Enjoy your meal!
