
When lunch time comes, I want to please my loved ones with something tasty, light and satisfying. In our family, we love all kinds of soups, but a special thrill is the transparent meatball soup, which we will cook together today.
Ingredients
Minced pork - 300 grams;
Potatoes - 4-5 medium tubers;
Carrots - 1 piece;
Onions - 1 piece;
Vegetable oil - for frying;
Salt, pepper, spices to taste;
Water - 2 liters.

In order to cook a light vegetable soup, first of all we will clean and wash the vegetables. Onions we will cut into small cubes, and we will rub carrots on a large grater or we will cut them into thin straws.

Set aside chopped vegetables for a while.

Peel the potatoes and cut them into small cubes.

We make meatballs of minced pork. We roll up the balls, picking up the stuffing with a teaspoon and dipping our hands in cold water. Minced meatballs should be dense, not liquid. It is better not to buy stuffing in the store, but choose a piece of meat and grind it yourself. So you will be confident in the quality of minced meat.

Fry for soup. Pour a small amount of any vegetable oil - corn or sunflower oil - on a preheated pan and lightly fry the onions and carrots in it. This will help give the vegetables more of its flavor and the soup will be rich.

Bring the pot of water to a boil, add some salt and cook the meatballs in it, removing the foam that forms. When they pop up, we catch the finished meatballs with a slotted spoon. Broth can be drained.

Cook potatoes in broth.

When the potatoes are soft, throw the steamed vegetables into the soup and let them boil for a few minutes.

Put ready-made meatballs in a pot of boiling rich vegetable soup.

The final touch is to throw pepper, herbs, bay leaves in soup, boil for a minute and turn it off; Do not forget to add chopped greens and cover with a lid, so that the flavors will not get away. Spill the soup in plates and serve for lunch.
