Salad with avocado, tomatoes and cucumbers is an easy and simple breakfast dish. Such food will charge with energy, will not create a feeling of heaviness. Preparing a salad is simple - chop vegetables, make a dressing from olive oil and spices, boil poached eggs and immediately serve on the table with toasted whole-grain toast. The preparation will take no more than 10 minutes. Believe me, it is much tastier and healthier than traditional "macaros".
Avocado contains vegetable fat, it is very useful. Also, avocado fruits are rich in vitamin E. In vegetarian recipes, avocados are often used instead of meat and eggs in some cold snacks.
On sale, most often, you will find unripe avocado fruits with dense and firm pulp and green peel. I advise you to leave these fruits at room temperature for several days. Avocado ripen at home, the flesh will be tender, like a mixture of butter and greens.

Ingredients for salad with avocado, tomatoes and cucumbers
- 2 avocados;
- 2 fresh cucumbers;
- 4 tomatoes;
- 80 g hard cheese;
- a small bunch of fresh greens;
- half a lemon;
- 1 tsp. a spoonful of spices for salad;
- 2 eggs.
For the sauce
- 2 tbsp. l olive oil;
- 2 tsp. soy sauce;
- 1 tsp. mustard;
- 2 tsp. vinegar;
- sugar, salt, pepper.

Cut the avocado fruit in half, pick up a bone and peel the fruit. Chop the flesh finely, put it in a salad bowl and immediately pour it with freshly squeezed lemon juice. Lemon or lime juice prevents the oxidation of avocados, helps to preserve the taste and appearance of sliced fruits.
Fresh cucumbers cut into strips, put in a salad bowl. If cucumber skin is tough and bitter, then it needs to be cut off in order not to spoil the taste of the dish.
We cut ripe red tomatoes into cubes, if you cook a dish with cherry tomatoes, you can add small tomatoes whole - it will be beautiful and tasty.
Rub hard cheese, chop a bunch of fresh greens finely. Add cheese and greens to the salad bowl.
Making salad dressing with avocado, tomatoes and cucumbers. Mix mustard, vinegar, soy sauce, a little fine sugar, sea salt, ground black pepper and olive oil. Mix the ingredients until a homogeneous mixture.
Sprinkle the chopped vegetables with a spice mix for the salad, pour the dressing, stir. For salads, I use a mixture of Indian spices, I find it difficult to describe what is in the mixture, but its taste is extraordinary!
Cooking egg poached. In a skillet, bring 1 liter of water to a boil, pour in two tablespoons of 9% vinegar. Smash the egg in a bowl so that the yolk remains intact. Pour the broken egg into boiling water, then immediately pour in another egg, cook for 2 minutes. We lay boiled eggs on the board so that the water of the glass and eggs will cool slightly.
Put the poached egg on a portion of the salad, cut it so that the yolk is spilled on the vegetables, salt and pepper.
Immediately serve the salad with avocado, tomatoes and cucumbers on the table with hot crunchy toast. Enjoy your meal!
