Stuffed zucchini, baked in the oven, in the east is called dolma, from the Turkic word dolmak, which means “stuffed”. Usually, meat or rice is used for the filling, and grape leaves, sweet peppers, quince, and tomatoes can serve as a shell. As a child I didn’t know this tricky name, however, the vegetables according to this recipe were cooked in the house quite often.
Zucchini is an amazing vegetable, its productivity often just scares me. Squash caviar, vegetable stews, pancakes and zucchini cutlets with an enviable regularity appear in the autumn menu. For a change, I advise you to stuff them with minced chicken fillet and stewed vegetables, and prepare crisped rice as a side dish. The result is a tasty and nutritious second dish - with sour cream sauce, what you need for dinner.

Ingredients for cooking stuffed zucchini baked in the oven
- 650 g of medium-sized zucchini;
- 115 ml of olive oil;
- 5 g of salt;
- 15 g white sesame:
For minced meat:
- 400 g chicken fillet;
- 100 g onions;
- 230 g carrots;
- 150 grams of sweet pepper;
- 30 grams of celery greens;
- 1 pod of bitter pepper;
- 20 ml of olive oil;
- 5 g of salt;
- ground paprika, black pepper, oregano.
Method of cooking stuffed zucchini baked in the oven
Medium-sized squash peel clean. Cut into several pieces with circles about 4-5 centimeters high. With a teaspoon we scrape the core with the seeds, leaving the bottom 1 cm thick.
In a wide saucepan, heat the water to boil, pour in salt. We blanch the vegetables in portions for 5-7 minutes, take out, put on a sieve so that the water flows.
Finely chop onions. We pass in a well-heated refined olive oil for frying.
When the onion gets a caramel tint, we add a large grated carrot. Fry the onion with carrot for 7 minutes.
For flavor add diced sweet pepper. The color of pepper is any, the main thing is to be fleshy.
Fry the peppers with carrots and onions for 5 minutes.
Chicken fillet cut with a sharpened knife across the fibers in small cubes or grind in a meat grinder. It is better to use the nozzle with large holes, so that pieces of meat are felt in the stuffing.
Pour salt, oregano, ground paprika and chopped green celery. We clean the pod of bitter pepper from seeds and partitions, cut them into rings, add to the other ingredients.
Fry the stuffing for a few more minutes.
Turn on to heat the oven to a temperature of 200 degrees Celsius.
Fill zucchini with minced chicken and vegetables, make a big hill, it will be more delicious. Pour olive oil in the pan for frying, put zucchini.
Put the pan in the heated oven on the middle shelf. Since the ingredients are brought to the ready, then you do not need to bake for a long time, 20-25 minutes is enough.
