Beet Kholodnik - chilled beetroot soup made from beets with cucumbers and greens. To make the dish nourishing, we complete the baker with boiled egg and potatoes in uniform. This is perhaps the fastest soup in the world, because it will take no more than 10 minutes to cook it if vegetables are ready. Nowadays, you don’t even need to spend money on cooking vegetables - there is always a large selection of vacuum-packed beets, potatoes, and even boiled eggs for us in the store.
In general, for hot summer days, the best choice is the refrigerator, which is cold beetroot or okroshka with beet. There are different recipes for this simple dish. The cooler can be cooked on water, on kvass, in my opinion, the most delicious is to choose kefir as the base, and fatty. I like to season the soup with sour cream, and kefir 6% will completely replace it, the texture of the holodnik will turn out to be tender and creamy.
Another important point: at the beginning of summer, cook this dish with young beets - it is sweet, it turns out incredibly tasty and healthy!

- 2 beets baked in the oven;
- 4 fresh cucumbers;
- 1 bunch of green onions;
- 1 l of fat kefir;
- 4 hard boiled eggs;
- 4 boiled potatoes (in uniform);
- dill, salt, black pepper, crushed ice.
The way of making baked baker from beets
Beetroot my carefully, wrapped in parchment, then in several layers of foil. We bake in a roasting oven heated to 200 degrees for about 30-45 minutes, depending on the size of the root vegetables.

Finely chop a bunch of green onions, add to the chopped vegetables.
Now we salt all the ingredients, mix, so that the juice stands out, which will paint our beetroot in an amazing pink color.
Next, pour the fatty kefir, so delicious, but if you're on a diet, then, of course, it is better to prepare the fridge from low-fat dairy products.
Crush a few ice cubes in a blender, pour ice chips into a bowl and mix the ingredients thoroughly. Be careful with ice, you do not need to add much, in a heat it is easy to catch a sore throat!
Pour a portion of beet holder in a plate. Add a hard-boiled and cut in half egg, all together pepper black pepper.
Boiled potatoes sprinkled with finely chopped dill.
