Ravioli with meat is a traditional dish of Italian cuisine, akin to our dumplings. The dough for ravioli is made from eggs and flour, it is one of the easiest recipes. If you have a machine for rolling, you can achieve the perfect thickness. But with the help of the usual rolling pin, you can also get a good result if you try. The filling is different, in this recipe of ravioli with meat it is the simplest - minced pork, curry, salt and onion.
You can put the finished ravioli on a board sprinkled with corn grits and freeze.

Dough for ravioli:
- 2 chicken eggs;
- 200 g wheat flour;
- pinch of salt;

- 200 grams of minced pork;

- 1 chicken egg;
- 1 L of mushroom broth for cooking;

Method of cooking ravioli with meat.
The dough for ravioli according to the recipe of Italian cuisine is prepared in the same way as for pasta or homemade noodles - for 100 g of refined wheat flour (flour in \ s) we take 1 large egg and a small pinch of salt (optional).
Then everything is simple: pour flour on the desktop, make a recess in the middle of the hill, break eggs into it, knead with hands. When it stops sticking to the table and hands, wrapped in food film, leave for 20 minutes at room temperature.
Lubricate the surface of the desktop and the rolling pin with olive oil. If you sprinkle the table with flour, then when you cook the ravioli, the broth will become cloudy.

With the filling, everything is simple - we add dry curry seasoning for meat and salt to homemade minced pork.
Then we rub a head of onion on a very small grater, which will add richness to the filling, mix the ingredients.
Smash a raw chicken egg in a bowl, mix the yolk with protein with a fork. This mixture is needed for gluing the strips together.
On a strip, the one that already, we put small piles of minced meat with an equal gap, grease the dough around the meat with an egg. We cover with a wider flat, cut with the knife into identical squares, press the edges with a fork, squeeze the pattern along the edge.
Heat the boiling mushroom to boil, salt to taste, put the ravioli in boiling water. After they float to the surface, cook for 2-3 minutes. Depending on the thickness of the dough and the size of the ravioli, the cooking time may be longer.
Such products are usually boiled in salt water, but in the broth, especially mushroom, it turns out to be more delicious.
Serve hot ravioli with meat, pour olive oil of the first cold-pressed extra virgin variety, sprinkle with red paprika and fresh greens.
