This recipe is a godsend for those who are in a hurry to cook something unusual, tasty, and there is no time for cooking at all. You do not have to mess with the meat grinder: a cutting board and a knife is enough. The board should be of a size that not only holds all the ingredients of the recipe, but also leaves room for work. You will also need a wide, sharp knife for chopping meat. These knives have different names - hatchet, cleaver, chopper. A wide knife is a very convenient thing, especially when preparing small portions. Agree that it is not always convenient to start a meat grinder or launder a blender in order to feed two people.

Ingredients for chopped schnitzel in the oven
- 500 g chicken breast fillet;
- 60 g onions;
- 60 grams of stale loaf;
- 35 ml of heavy cream;
- 50 grams of parmesan;
- 20 g dried carrots;
- 15 g cilantro;
- 5 g paprika flakes;
- 10 ml of soy sauce;
- 15 g of mayonnaise;
- black pepper, salt, vegetable oil;
- lemon or lime, rosemary.
Method of cooking chopped schnitzel in the oven
Immediately heat the oven, and while it is heated, cook the mince. For those 10 minutes that the meat will sit in the oven, you can cut the salad of fresh vegetables.
Chicken breast fillet is first cut into cubes, then chopped with a chop chop.
We remove a small onion head from the husk, chop it, add to the minced meat.
Next, we add ingredients that will not only make the schnitzel tender, but also help to “glue” the stuffing. Cut the crust off a stale loaf, cut the flesh finely.
Pour the sliced loaf on the board, pour it with heavy cream.
White chicken meat is rather dry so that the chopped chicken schnitzel in the oven turns out to be juicy, add the “fatty” ingredient - grated parmesan.
Seasoning stuffing - pour dried carrots and dried paprika in flakes, finely chopped bunch of fresh cilantro, pour soy sauce.
All together we salt to your taste and again chop the mass with a chopper. This is an important point of cooking - in the process of cutting the ingredients are well mixed and further crushed.
Divide the meat in two portions, form large flat schnitzel. It is impossible to transfer such a schnitzel with hands, but it is necessary to imagine the shape of the future product.
We take the form with a thick bottom and a non-stick coating, lubricate with odorless vegetable oil, lay out two portions of minced meat. We form schnitzels about one centimeter thick right on the pan, squeezing a thin strip of mayonnaise from above.
We warm up the oven to 210 degrees Celsius, send the form to a hot cabinet for 12 minutes, 3 minutes before readiness, you can turn on the grill mode, you do not need to turn it over.
